Cook with Patsitivity #11: How about some spicy chicken in coconut milk? πŸ˜‹

Hola, foodies! Glad a few of you went wild with the last recipe I shared here. Always a pleasure to share my passion for creating delish meals and treats from scratch with all of you here.

Aside from cooking, baking, and experimenting in the kitchen, I'm also passionate about encouraging people to be hands-on in their meal preparation. Over the weekend, my boyfriend and I had an important online event to attend. Occupied with the event, we settled for processed food for our breakfast, lunch, and dinner. We had beef tapa (my favorite!), longaniza, and chicken nuggets to name a few. I love eating all of these but I rarely eat processed food because I'm very mindful of what I eat. As they say, "You are what you eat!" I know there are days when prepping a meal for yourself and your family is inconvenient and impractical, but I hope you don't settle and choose what's more convenient over eating healthy food all the time.

Today, I'll be sharing another simple but heavenly recipe that even those who label themselves as incapable of cooking can nail for the first time! And this recipe is definitely better than the processed food I've had last weekend! Sounds interesting?


What's inside this bowl of goodness?

Above you've seen a bowl of savory chicken topped with some chili, but what do you need for you to make the same bowl of goodness in the comfort of your home?

  • chopped red and green chili peppers (If you don't want it spicy, you can skip this. But this recipe is best with some hot and spicy kick!)
  • 2 pcs medium size minced onion
  • 1 head minced garlic
  • 50-100g minced/julienned ginger (I use both minced and julienne cut)
  • 2 cups coconut milk
  • 1 kg chicken (I used thigh and drumstick part, but any part/cut will do)
  • shrimp paste (I used the sweet and spicy variant)
  • salt and pepper to taste

Note:
For me, the highlight of this recipe is the ginger, shrimp paste, and coconut milk. Make sure that you have all three when you decide to try this recipe at home!

And of course, chicken! I haven't tried the same recipe but using pork or beef. But I believe, it'll be just as great. But let's stick with chicken for now! 😁

Let the cooking begin!

I always hear "But I don't know how to cook!" when I tell people it's easy to cook at home. Before you say "You're the worst cook in town!", grab your pans and follow this step-by-step procedure! That's what recipes are for (either videos or in a written format such as the one I'm sharing with you); recipes exist for anyone to follow. Even beginners could cook and feel like Michelin Star Chefs and it all starts by sticking to recipes!

As long as you follow this step-by-step procedure, be prepared to hear a "Honey/Mom/Dad! This is great. Can you cook it again?"

[1] In a heated pan, add oil and saute the onion, garlic, and ginger.

[2] Add the chicken and mix. Continue mixing on low flame for about 3-4 minutes.

[3] Add the shrimp paste (variant of your choice) to the pan and continue mixing until the paste is well combined to the chicken. Allow to simmer for 2-3 minutes still on low flame.

You'll now notice that the chicken is starting to cook. Keep stirring and mixing the chicken for five more minutes.

[4] Add 1 cup of coconut milk, and mix thoroughly. From start to finish, cooking should be in low heat/flame only. Let the coconut milk boil on low heat until it dries up and turns into oil.

Add the chili pepper. I love spicy food so I added a lot of chili flakes too! πŸ˜‹

This is how it'll look once the coconut milk dries up. You'll see a lot of oil! Don't you worry, you're in the right track. Keep going!

[5] Add the remaining 1 cup of coconut milk. Allow it to boil and turn into oil (again). While doing this, mix every now and then. Add more chili pepper or chili flakes, salt, and pepper to taste!

Once the last coconut milk dries up, serve hot and garnish with more pepper! πŸ˜‹


That's it! Our simple yet tasty chicken recipe for today that you'll end up craving over and over once you've tasted it! Friendly warning, if you're on a strict low-carb diet, better skip this recipe for it's best paired with hot rice! πŸ½πŸ˜‹

This looks amazing! Judging by the ingredients, I am all in! It is something that many of the people in my family love, or at least the blending of the flavors. You have such a unique talent for being able to judge what works well together. Perhaps unique is the wrong word, but, it is mighty fine! :)

I see you used drumsticks and I find them to be easier to handle, but, after years of using white meat in chicken, I have finally decided that chicken thighs have more flavor! I am such a slow learner, so I may try them first.

Like oyster sauce and so many other things in the culinary world, shrimp paste is not like eating shrimp. For those western people that have never had it, it's cool! Try it! I can hardly wait to try it.

You're on point! Shrimp paste or what we call bagoong is something we eat as a side dish here in the Philippines. There are times, it's the main dish. Haha The one I used is sweet and spicy, imagine the play of flavors here. Wishing you luck in trying this dish! Trust me, you'll love this dish! πŸ˜‹πŸ˜‰

Haha! I should have said that I think thigh meat has perhaps more flavor, but, I prefer the beast meat. The rest of the family likes thigh meat. I think it is a fattier part of the chicken. I didn't check that fact. :)
