That afternoon I went shopping to the traditional market in my area in one of the remote areas. The market atmosphere in the afternoon was quite crowded, and I took the initiative to just go there to buy some kitchen necessities while taking an afternoon walk. When I was buying fish the seller offered baby squid at a very cheap price, he sold it for IDR. 15,000 I don't know exactly how many ounces of squid it was because he piled it up and offered it to me. I rarely enjoy squid, besides my mom doesn't like squid, the price is also quite expensive. It was very fortuitous to find this small squid at such a cheap price. Once at home I immediately cleaned the squid and to make sure I weighed it again, it turned out that the weight of the squid after cleaning was quite a lot, namely 300 grams. I immediately imagined that I would make a spicy seasoning with the aroma of orange leaves so that the squid was delicious and not fishy.
Sambal Baby Cumi Orange Leaf
This menu is a baby squid stirred with spicy chili sauce, then added lime leaves as a complement. This is to neutralize the fishy aroma of baby calamari. But still making chili sauce by adding lime leaves in my opinion is much better. Moreover, the chili sauce is spicy, savory and there is a sweet taste from the soy sauce that I add. In addition, the broth from the squid is also very good without adding anything.
Ingredients
1 tomato
6 red chili peppers
8 cloves of shallots
2 cloves of garlic
3 Orange leaves
½ teaspoon salt
1 tablespoon sweet soy sauce (optional)

Cooking Procedure
Prepare shallots and garlic, chili to be mashed, as usual before mashing I always cut into small pieces all the ingredients.
Puree all ingredients that have been chopped until smooth using a little water.
Next chop 1 clove of shallot then cut or tear into several pieces of lime leaves.
Cut the tomatoes into small pieces, then heat the cooking oil.
All ingredients that have been chopped are sauteed in the heated oil until wilted.
Then add the spices, and add a little water to cook until the spices are cooked.
If the spice water has shrunk add the squid that has been drained and not much water anymore.
Then cook, and don't forget to stir so that the squid soaks into the seasoning.
If the water has shrunk, add sweet soy sauce, then correct the taste if the taste is right you don't need to add anything. I usually only add salt when marinating.
Serve
Spicy baby calamari with the aromatic characteristics of citrus leaves and curly chili makes this calamari very passionate, right? Moreover, this plate portion is enough to be enjoyed during the day with warm white rice. I'm excited to enjoy it haha I can't lie, it's just too good for me not to finish it.
Spicy, savory, sweet combined perfectly, not to mention the fragrance of orange leaves added to my appetite. And there's more you should know the squid is perfectly cooked not tough at all. This is what makes me like baby calamari cooked in any way more quickly tender and the taste is very good indeed.
