First Time Making Coffee Bun Bread

This bread always tempts me when I visit one of the most popular supermarkets in my city. I don't know why the fragrance of a room in the supermarket is enough to tempt me when visiting there. Minimizing curiosity, I finally explored recipes on the internet so that I could make this cake myself at home.

Roti O or known as coffee bun, this one bread has a fragrant aroma when baked. Besides the aroma, the taste is also very good and has its own characteristics. Now of course you know if this one bread has a fragrant coffee aroma, of course the coffee aroma is very distinctive with a mixture of several ingredients stirred in the topping dough.

So here I will invite you to prepare step by step preparation.




Ingredients Used


Dough Ingredients

300 grams of wheat flour
50 grams of milk powder
1 egg
1 tablespoon instant yeast
2 tablespoons sugar
Salt to taste
2 tablespoons butter
130 ml cold water

Topping Ingredients

1 tablespoon instant ground coffee
2 egg
2 tablespoons butter
Chocolate coloring to taste
50 grams of wheat flour
1 teaspoon salt
2 tablespoons of powdered sugar


Stuffing Ingredients


Butter frozen to taste
Sugar to taste




Making Procedure


Step 1


Making bread dough


Mix flour, sugar and instant yeast then add eggs. Stir all until evenly distributed.

Next add water then knead the dough until well mixed.

Then add margarine and salt.

Knead until smooth then rest the dough for about 20 minutes until it doubles in size.

Step 2


Preparing the coffee topping


While waiting for the dough I prepare the topping first, mix one egg yolk and one whole egg then add powdered sugar.

Then brew instant coffee with hot water here I use instant coffee brand luwak white coffee. Add chocolate so that the color is more intense.

Then mix the coffee into the egg and sugar.

Add flour then mixer briefly at low speed, finally don't forget to add butter.

If it has thickened, let all the dough put in a plastic triangle. Then set aside first.

Step 3


Application of dough with filling


Now when it has been 20 minutes deflate the dough then divide the dough into several parts.

Add with pieces of butter, and also sugar. Round it then arrange it on the baking sheet, then rest again for about 60 minutes.

Step 4


Topping application and bake


Then add the topping on the surface of the bread, do it until it is perfectly wrapped.

Do it until it's finished topping and then bake it at 180 degrees Celsius, bake on low heat for 5 minutes and then bake on high heat for about 25 minutes or until the bread is cooked.

Enjoy the deliciousness of this coffee bread when it's still warm out of the roaster, uhh it tastes so good and the softness of the bread adds an amazing flavor. I really like the crunchy layers of the bread and most importantly the sweetness and coffee flavor. It's really good. I even enjoyed the melted topping on the baking sheet. Because that part is really delicious.

After all the bread was cooked, I put it in plastic and planned to bring half of it to my friend. But there is something that makes me confused after a few hours of cold bread the outer layer is not crispy anymore but instead turns sticky.

But it still tasted good, I guess the result is better after being baked. And I think I failed to make this bread, the final texture of the finish after it cooled down was out of my control unlike the ones sold in the mall that remained crispy even after it cooled down. Ahh I'll have to recreate it someday. If you know the secret of how the topping stays crispy let me know this.
