Fried eggplants in tomato sauce.

In these days here in Italy it's quite cold and rainy, nice days for cooking at home, and I have some eggplants in my fridge.
I love aubergines in all shapes and recipes, especially in winter they are among my favorite dishes, today I will tell you about a simple but very tasty recipe, suitable for the cold winter and completely vegetarian!

For this recipe you need:

three eggplants
500 ml of tomato sauce
an onion
a celery
two tablespoons of salt
one of black pepper
two of extra virgin olive oil

First cut the aubergines into strips and clean them, leave them in the fridge for about half an hour, with a little salt on top to remove excess water.
Prepare a pan with oil and fry a little peeled onion.
In the meantime, clean the celery and cut it into slices, then add it to the sautéed mixture, to which then add the aubergines, and sauté them for about fifteen minutes, after which add the tomato sauce, salt, oil and pepper, mix all for about twenty-five minutes, until the mixture look crunchy, and the tomatoes looks ready, then your fried aubergines in tomato sauce will be ready and you can serve them.
If you want you can add some parmesan cheese for give it more flavour.
It's really a simple and cheap dish!

Aubergine is so versatile, which is why we also enjoy using it in our kitchen: fry, bake, roast, etc. We even know a recipe for a hot sauce made from eggplant.
