Hi! With great joy I'm following a suggestion, I'm going to teach the recipe with all the details of the vegan jackfruit pie, without gluten that I published in the last post, and as Hive's priority is quality content, in this post you will also find out ideas to make your pie elegant using the same techniques as good restaurants, and learn a little more about the nutrients in this recipe and some of the benefits it brings to your health.

Artocarpus heterophyllus

Is the scientific name of the plant that produces jackfruit, it is a large tree native to India and can be found in Brazil and throughout Asia.

Ripe jackfruit is a tasty sweet fruit, but when unripe it has a neutral flavor and absorbs flavors easily. It is the favorite of vegans in Brazil to replace meat in classic recipes such as pies and lasagna.

It is rich in fibers that help digestion and the functioning of the intestine, antioxidants, iron, calcium, phosphorus, potassium that are essential for the proper functioning of the brain, in addition to vitamins A, C and the B complex that are essential to synthesize some hormones, Finally, it's very nutritious

To prepare the jackfruit meat, we are going to use a green fruit (it is important that the jackfruit is not overripe), roast it whole in the oven for 3 hours at 150 degrees until it is very soft.

Or cut it into pieces that fit in the pressure cooker and cook with water for 40 minutes. After cooking or roasting, we remove the skin and seeds and the pulp that remains is ready to be used.

I don't have a photo of this process because I'm using frozen pulp that I had prepared before, we don't have jackfruit here on the island during this time of year.

Jackfruit contains a very sticky sap when raw, so you can use gloves to handle and grease your utensils with vegetable oil before using them on jackfruit.

And one last note before the recipe, if you don't have jackfruit in your country, you can replace it with chopped hearts of palm or use your favorite vegetable.

Let's start with the base of the pie, this pie crust is very versatile and can be used with any filling, including in sweet pies I've already used and I really liked the result. This pie base is vegan, gluten free and have protein.

Ingredients:

50ml of water
50ml of olive oil
170g chickpea flour
90gr of rice flour
2 grams of salt

Method of preparation:

1 - Mix the two flours and salt, add the oil and mix until the dough has a beach sand texture.

2 - Add water and stir until smooth

I love sesame so I'll add the dough, but it's optional.

Divide the dough and a 2/3 part distribute to cover the shape. Remaining 1/3 set aside to cover the top of the pie.

Bake at 180 degrees for 10 minutes just to pre-bake the dough.

And now let's prepare the stuffing 😉

The filling ingredients are:

1 medium onion cut into small cubes
1 bell pepper cut into small cubes
1 cup of parsley
500gr of jackfruit meat.
50ml of tomato sauce.

Method of preparation:

Brown the onion using the fat of your choice (I used olive oil), add the peppers.

After everything is golden, add the jackfruit meat, tomato sauce, season with salt, turn off the heat and add the parsley.

Wait for the filling to cool before placing it in the dough, so that the pie base does not absorb all the liquids from the filling and completely fall apart.

Spread the filling and we are going to prepare the topping by opening the dough with a rolling pin and cutting into circles.

Let's assemble the circles on top of the pie forming a geometric pattern.

Here you can use your imagination and cut triangles, squares or any shape you choose, using geometric patterns to decorate pies is a technique widely used in large bakeries can bring a surprising result in addition to being very elegant.

I'll also show you how I made the pie frosting from the last post, I used zucchini.

Just cut in half horizontally and then vertically, then cut slices to the same size.

Then we will brown the slices in a non-stick frying pan.

And arrange the slices on the pie as the image suggests.

Then just take it to the oven preheated to 180 degrees to bake for another 10 minutes and it's ready.

I took it out of the oven and added some 4 leaf clovers for good luck as the @braveboat wished.
