Coto Makassar, Tradisional Food Typical of Makassar City Which is Worldwide

Who has been to Makassar City ? Makassar City is the capital of South Sulawesi Province, one of 34 provinces in Indonesia. Makassar City is located in the eastern part of Indonesia.

Makassar has one type of traditional food that is known and popular. Not only known ang loved by the local community themselves, but also famous ang popular even from outside the City of Makassar. The name of traditional food is Coto Makassar.

Coto Makassar, it is said that the story has existed since the reign of the Gowa Kingdom. It is a royal dish served to the king and his family family as well as the servants in the kingdom. Coto Makassar is also one of the dishes when the kingdom has guests from other kingdoms visiting.

Coto Makassar itself is a soupy dish, filled with beef and offal. The beef ang offal are cooked for a long time to get a soft texture and cook evenly on each side of the meat. After the meat and offal are cut into small pieces with the aim of making it easy to consume. The pieces were placed in a bowl ang given a sauce with a distinctive taste.

Coto Makassar soup is not just any sauce. The sauce is not the same as the soto in other areas in general. Coto Makassar is made using dozens of traditional spices like using shallots, garlic, ginger, galangal, candlenut, pepper, coriander, lemongrass, bay leaves, lime leaves, leeks, pecan, pecan leaves, nutmeg, cinnamon, star anise, chili and salt. There are also fried peanuts that are mashed and mixed into the sauce. This result in a thick, thick sauce with rich blend of spices. Coto Makassar itself is cooked using a cauldron made of clay and cooked using a fire stove. In this way the taste becomes even more delicious.

Enjoying Coto Makassar is more complete with ketupat. That is rice stuffed into a box made of pandan leaves and then cooked for up to 4 hours. In addition, in a bowl that has been filled with Coto Makassar complete with sauce, we add sliced leeks, lime juice, fried onion and stir-fried chili sauce.
