You can’t have a drink without a small snack 😊 and below sweet and spicy nuts are the right combination.
Ingredients:
500 g of various nuts
55 g of brown sugar
1 large egg white
½ teaspoon of salt
¼ teaspoon of cinnamon
1 teaspoon of sweet paprika
a pinch of nutmeg
¼ teaspoon cayenne pepper (you can skip this part if you don’t like spicy food or add some to make it more spicy)
You can make your own selection of nuts 😊 I’ve used: almonds, roasted hazelnuts, cashews and roasted peanuts (all need to be unsalted). The day before, I soaked the almonds in hot water for about an hour, removed the skins and left them to dry overnight.
Let’s make the sweet and chilly nuts!
Put the almonds and cashews in the oven at 180°C for 10 minutes to lightly toast. Took them out and let them cool.
In a bigger bowl, whisk the egg white. Then add in the nuts and mix all well. Add the sugar and all the spices as well and mix all again.
Spread the nuts on a wide baking tray covered with baking paper. If possible, arrange them on the baking tray so that they touch as little as possible.
Bake at 160oC for 30 min. Remove from the oven and leave to cool. These nuts can be stored in an airtight container up to one month.
