Crispy and healthy Nordic seed crackers

If you are looking for a crispy and healthy snack this is a super easy recipe that you have to try. We are making these crackers regularly and save them in an airtight container or bag for few weeks. I’ve tried the Scandinavian flat bread already but never thought of make any of the recipes at home 🤔 - then, one rainy and fogy day we were wondering around the shelfs of the big Scandinavian furniture shop 😊 but of course we went also into the food corner, where I sow a mixture for DIY crackers and I had to try it. They were good but I do prefer to make food with my ingredients and not just use a ready mixture, that is why I’ve done some research and start to bake my first Nordic seed crackers. And here we are, sometime later, I’m sharing this recipe with you and I hope you will like it.

Ingredients:

  • 100 g of pumpkin seeds
  • 150 g of sesame
  • 100 g of sunflowers seeds
  • 150 g of linseed
  • 50g of chia seeds
  • 33 g of psyllium husk powder
  • 1,5 teaspoons of salt
  • 2 teaspoon Cream of Tartar
  • 700 ml of water
  • 100 ml of olive oil

Crash the bigger seeds (pumpkin and sunflower) into smaller pieces. I do it with an electric chopper (just few turns) if you prefer you can chop them with a knife.

Mix all the seeds together, add the psyllium husk powder, salt, olive oil and the water and let it rest for 30 - 45 minutes. The time needed that they are all swell and the mixture is nicely thick.

Divide the mixture into 4 parts (you will use each part for one tray).

Place one part of the mixture on a baking paper and cover it with a second baking paper. Roll out the seed’s mixture between the papers till it is very thin and extended to the whole size of the big tray (35 x 40 cm). Only when you have transferred the baking paper with seeds into the tray, remove the upper baking paper. Do the same procedure also with the other 3 parts.

Bake for 30-45 minutes at 180°C. Let them cool down, crack them in smaller pieces and serve (or save them in airtight container.)
