Greetings to all! Today I want to share with you a recipe for Healthy Cookies, made with natural ingredients, for those who cannot eat sugar, gluten, unhealthy fats and flour... This recipe really came to me because the doctor recommended me a diet without fried foods, oils and sweets, because i had an intestinal infection. But I'm a glutton and I love sweets, so I couldn't sit idly by hahaha. I hope you enjoy and do it at home!

Hoy quiero compartir con ustedes una receta de Galletas Saludables, hechas con ingredientes naturales, para aquellas personas que no pueden comer mucho azúcar, glúten, grasas no saludables y harinas... Realmente esta receta se me ocurrió porque el doctor me recomendó una dieta sin frituras, aceites y dulces, debido a una infección intestinal. Pero yo soy muy glotón y amo los dulces, así que no me pude quedar de brazos cruzados jajaja. ¡Espero la disfruten y la hagan en sus casas!

Ingredients:

250 gr of Oatmeal
1 Coconut
3 Bananas
1 Egg
50 gr of Raisins
40 gr of Peanuts
Cinnamon
Escence (Vanilla or almond escence)

Ingredientes:

250 grs de Avena
1 Coco
3 Bananas
1 Huevo
50 grs de Uvas pasas
40 grs de Maní
Canela
Escencia de Vainilla o de almendras.

In a cup we are going to take the bananas and we are going to mash them until we achieve a mixture like this. You can mash them using a fork or with the paddle.

En una taza vamos a tomar los bananos y vamos a triturarlos hasta lograr una mezcla que quede de esta manera. Puedes triturarlos usando un tenedor o con la paleta.

Then, in a bowl we are going to put the banana mixture, and we are going to add the egg, the escence and a pinch of salt. And mix

Luego, en un bowl vamos a colocar la mezcla de banano, y vamos a agregar el huevo, la escencia y la pizca de sal. Y mezclamos

To the mixture, we are going to add the raisins and the peanuts, and continue mixing! I cut the raisins into small pieces for better distribution in the cookies, and better sweetness.

A la mezcla, vamos a agregarle las uvas pasas y el maní, y seguimos mezclando! Yo corté las uvas pasas en trozos pequeños para una mejor distribución en las galletas, y un mejor dulzor.

Add the grated coconut. ATTENTION: I used a small coconut, but if you have a bigger coconut, use only half of the coconut, and grate it. You can save the rest for other recipes!

Agregamos el coco rallado. ATENCIÓN: Yo utilicé un coco pequeño rallado, pero si tú tienes un coco más grande, utiliza solo la mitad del coco, y rallalo. Lo demás puedes reservarlo para otras recetas!

At this point we are going to add the oatmeal and the cinnamon, and we are going to mix everything very well, we are going to let it rest for 5 minutes.

En este punto vamos a agregar la avena y la canela, y lo vamos a mezclar todo muy bien, lo dejaremos reposar 5 minutos.

The mixture has to be like this, it has to be moldable, but only if you consider it necessary, add a little more oatmeal. Now we can start shaping our cookies and place them on a non-stick tray, or you can put coconut oil on it. Oven preheated to 180°

La mezcla nos tiene que quedar de esta manera, tiene que ser moldeable, pero solo si lo consideras necesario, agregale un poco más de avena. Ahora ya podemos comenzar a darles formas a nuestras galletas y colocarlas en una bandeja antiadherente, o puedes colocarle aceite de coco. Horno precalentado a 180°

And this is how my cookies came out! I left them in the oven for 20 to 25 minutes approx. I made some cookies and others I shaped into a nutritional bar. Then we let them cool, and that's it! To enjoy!

Y así es como quedaron mis galletas! Yo las dejé en el horno de 20 a 25 minutos aprox. Yo hice unas galletas y a otras les dí forma de barra nutritiva. Luego las dejamos enfriar, ¡y listo! ¡A disfrutar!
