The Spare Ribs I used here came from a discount Supermarket.. Nowadays, one can also make delicious grilled or roasted spare ribs at home. The marinade makes the difference. Sometimes I soak my meat in coca cola or beer, depends on what have at home. The carbon in the cola makes the meat become soft ad later crispy when roasted.
In this post, I was able to get freshly delivered spare ribs, the supermarket that sold it advertised that the meat will be available on a certain date. The day came and I went early so I could grab a couple of packs.
Oven Grilled Spare Ribs
For 4 Persons:
Ingredients:
1-1.5 Kgs. Spare Ribs
1/3 cup soy sauce
4 cloves crushed garlic
5 dried bay leaves
olive oil or any cooking oil
1 glass cola (beer would also do)
salt
ground black pepper
Preparations:
Preheat the oven at 220 °C / 428°F
1... Wash the meat thoroughly, pat with paper towels. Arrange the meat in a deeper bowl or tray. Rub both side of the meat with crushed garlic then with soy sauce, rub a bit of salt and ground pepper as well and leave for about 20 minutes for the spices to get through the meat. Then pour the cola and a few drops of the olive oil on to the meat. Add the bay leaves , cover with a transparent foil or aluminum and leave in the refrigerator overnight.
2...The following day, place a baking sheet or aluminum foil on the tray... arrange the spare ribs on the tray , place in the lowest oven rack and grill the pieces for about 30 minutes thereby brushing the sides with the remaining cola soy sauce mixture. Turn sides, again brush with the cola soy sauce liquid and grill for another 30 minutes.
Check the meat if already done. You can cover the meat with aluminum foil half of the grill time so that they don´t get burned. At the end of the of grilling time, arrange in platter and cover with foil to keep warm in the oven. This can be served with sautéed potatoes below.
In the meantime, let´s make the potatoes as by-dish.
Sautéed Potatoes
Ingredients:
1/2 kilo potatoes, peeled and diced
6 cloves garlic, crushed
1/2 tablespoon caraway seeds
1 /2 cup parsley, cut
salt
ground black pepper
cooking oil
Preparations:
1... Fry the garlic in a hot pan with 2 tablespoons oil. Add the diced potatoes , mix and stir-fry continuously.
2... Add the caraway seeds and the cut parsley below. Add a bit of oil if necessary, turn the heat to medium, then continue stirring until potatoes become soft and crispy.
When cooked, your Sautéed potatoes will look like this in the below image.
I served 3 dips, one is store bought sweet and sour chili sauce, then I made a sour cream dip, I simply add a bit of butter milk to it to loosen the consistency and added salt and pepper. The third bowl is a dip made with sour cream but I added a catsup and a dash of curry powder. The dips are according to my taste preference. One can experiment on the dips by adding spices you like.
Serve your spare ribs with the potatoes and the dip.
