We always have it during our fiesta celebration. I remembered when I was young we often eat it at my Grandma’s house during the fiesta. She cooks it very well. I tried to imitate her way of cooking but failed to do so. I still need a lot of practice to be as good as her in cooking banana meat. That's the best thing about having Lola’s ( grandmother) who cooks well. Celebrating fiestas will not be complete without this recipe serve on the table.
Since we don't have available fresh ground meat in the fridge, and I don’t want to go to the market, I use skinless longganisa to stuffed the banana. Skinless longganisa is a Filipino type of sausage made with ground meat and spices. Usually, it tastes sweet. So, here I am again sharing another cooking from our town. Ingredients: medium ripe saba banana, skinless beef longganisa 2 tablespoons of flour, 1 small size egg, 1 tablespoon of oil
Preparation
Step 1: Peel the banana and squeeze the meat out of the skinless longganisa.
Step 2: Using a knife, slit one side of each banana without going all the way through.
Step 3: In a pot, put the oil and heat it for a while, and put the skinless longganisa. Let the meat brown a little. Remove from the pan and set aside.
Step 4: In a bowl, combine egg and flour. Whisk together until smooth and well blended.
Step 5: To stuff the banana: Hold the banana with one hand, with the slit facing you. Slide your thumb into the slit to make it bigger. Spoon mixture over stuffed bananas to cover meat filling.
Step 5: In a pot heat the oil and fry the stuffed bananas. And Voila!
This is an interesting recipe. It looks delicious. I might ask my sister to try cooking it. !wine
