Brunch in a cup

It rained a bit last night….that was supposed to take the edge off this oppressive heat…but no :( :( …. All it has done is make the weather more humid and heavy and unbearable…so the torture continues….

No matter what…. it’s a luxury to have a lie-in…. have a leisurely brunch…watch some golf on telly…. lounge around in pyjamas all day …. Have a chat with friends on whatsapp ….

Sounds like a plan????

Except that there is a teeny weeny hitch here :) …before having the brunch someone has to make it!!!!!!

Well mom is not here….how about making a lazy persons brunch…everything in the same cup…..so brunch in cup here it is…an egg bacon and toast cup….

Banana breakfast parfait for me (recipe to follow) ….with some grilled mushroom and tomatoes…watermelon Aguas frescas (recipe to follow)…and a cup of chai….and you are set to laze around all day with a few more cups

Egg bacon and toast cup (big brunch for 1)

2 slices of your favourite bread (i used white sandwich bread because that was what was on hand)

2 eggs

2 slices of bacon

2 firm mushrooms (you can use cep or any other you want…i used regular champignon de Paris)

2 slices of tomatoes ( i used Roma)

chives (a pinch…i used dried…but fresh chives pack a punch)

salt to taste ( i did not use any since bacon is salty enough)

pepper (if you want)

1 teaspoon olive oil

butter 1/2 teaspoon (or if you need a bit more to line and prepare the tin)

Preheat the oven to 200°C

Prepare two cups of a muffin tin by brushing butter…even if you are using silicone moulds still don’t skip this step because it gives the bread that fried bread taste and crispiness

(I skimped on the butter and you can see that the bottom of the cup partially stuck to the mould :) )

Flatten the slice of bread with a roller pin and slightly dampen it with water ( makes it easier to mould the shape to your cup)

line the muffin cup with bread slice to get a bread cup…….arrange the bacon inside the bread cup….and break an egg inside this cup. Add salt and pepper if using. Sprinkle chives and put in the the preheated oven for about 15-20 min.

Meanwhile prepare the mushrooms and tomatoes……slice both thickly…heat olive oil in a pan…and grill the mushrooms on both sides till golden brown….and the tomatoes till warmed through.

The eggs would be all set by now….bacon cooked and bread crispy….well at the end of the day its egg bacon and toast but doing it this way makes the sunday brunch a bit special :) …don’t you agree:)

Egg, bacon and toast!!! simple…you will say….what could go wrong???? well obviously it can :) ….from taking it out of the oven to eating it…it took us about 5 min. to take the photos…and in that time the heat from the bacon and toast kept cooking the eggs….so we ended up with not so runny yolk…. 😉

So if you you need to wait before tucking in….take the cups out of the oven about 5 min before they are done….and enjoy when you are ready …with tea and book :)
