Vegan Baked Rosemary Potatoes with Triple Vegan Protein

Hi Foodies, Hive & Vegans. Respect

Today i show you a real simple "set up" to have
vegan food plates for days, but you only have to cook
once.

Ok, this is how:

I cook up 2kg organic potatoes, this red potato here is called "Luna Rosa".
I cook up a normal sized pot of lentils.
And mostly i got pumpkin seeds & sunflower seeds ready stashed...in a glass (deplastified😉).
After i ate the first portion when the potatoes and lentils a freshly cooked,
i place the big pot in the fridge, and in the following days you just fix
yourself nice baked potato plates...

And what tastes better than Baked Rosemary Potatoes!? 😋

Lentils, pumpkin seeds & sunflower seeds are my 3 vegan protein sources here.
But you could be creative, and also throw some cashews e.g. on the potatoes...
they come out nice roasted, too!

So this is how the plate goes into the oven...

..together with some cherry tomatoes and my awesome fresh
rosemary (plant), which gives me fresh rosemary even in winter.
Grind some salt & pepper on it and cover the potatoes with some nice
oil, i use a "well rounded" olive oil, which can be heated a little.
Oven Temperature:around 200 degrees.

And this is how the potatoes come out baked

While i wait 20-30 min. i "get baked" too 😜
Then you can eat even more..😅

Eat your salad!

Here i added some awesome powerful organic endive salad with a
strong leaf, plus salad herbs and some more olive oil 'pon top
and a little bit of vinegar. I also recommend a good mustard which
fits nice to potatoes & lentils.

Voilà...enjoy your plate! You are what you eat 😊

On the next day i switched up the plate...

..and put some tomato sauce on the potatoes.
If you find time, fix some freshly cooked veggies
to it. Today i gotta use up some chard e.g.
Depending on how much you eat, this set up lasts
for 3-4 days. Try it , enjoy your food and always:

That is one protein-packed dish indeed, and it looks very delicious chef. I miss getting protein from non-bean sources, but seeds are just too expensive here in Suriname, so I'll have to wait til I get out of the country to throw a heap of sunflower seeds on a salad, but you've triggered my craving with this one.

What's up with the akee..? I had a lot of them in Jamaica, i think they are protein rich, too... does the akee grow in Suriname?

I think the read one is better in texture and taste than the general potato :)

True...the red ones have this colorful yellow inside,a bit better than the normal one, yes 😉
