Cravings are not only reserved for pregnant women, right?
Cheesecake - rich, creamy, and delectable. That was my craving, but, I did not have any Cream Cheese or Ricotta Cheese, without which one cannot make Cheesecake, right?
Wrong! Well, almost...
About a month ago, I hosted two very special Hivean guests here at Lily's Cottage - @edenmichelle and @emcandlish. Emma shared her 3-ingredient cheesecake, but, I had no Condensed Milk, so that idea flew out the window.
I did a Backrub Google search, Backrub indeed was the ancient name of Google, believe it or not! and found a couple of recipes that used ingredients I always have - Yogurt, Eggs, and Cornflour.
As often happens in real life, I don't always listen, changed the method, AND forgot to use a water bath when baking the Yogurt Cheesecake!
Yes, this cake needed a bath so that it did not crack, and to give it a smoother texture.
Why add whole eggs, as per the many recipes' instructions, when egg whites can be whipped to stiff peaks, and thus incorporate air into the cheesecake!
The top indeed cracked, and the edges looked well-baked, but, the texture was light and fluffy.
Cheesecake needs a fruity topping, in my eyes at least, and I had Passionfruit, one of my absolute favourite fruits for a dessert, cake, or tart topping.
𝓜𝓸𝓬𝓴𝓤𝓹 𝓒𝓱𝓮𝓮𝓼𝓮𝓬𝓪𝓴𝓮 𝓡𝓮𝓬𝓲𝓹𝓮
3 Ingredients
- 1kg Double Cream Fruit Yogurt - I used Passionfruit & Mango flavour
- 2 Eggs, separated
- 45ml Cornflour
4-steps
Beat yogurt and egg yolks together
Sift cornflour in and mix
Whip egg whites till stiff peaks form
Fold into yogurt
Line a cake pan with baking paper, spoon the mixture in, and smooth top
Note: this is the step I ignored missed:
Place into water bath - fill a larger pan with water, and place pan with cheesecake inside it
Bake approx 50 min at 170°C or till set
Leave in refrigerator till ice cold before carefully removing from pan
If you've not used a ringform pan, invert onto a plate, then invert again onto a serving plate
Passionfruit Topping
- 3-4 Passionfruit
- 50ml Sugar
- 10ml Custard Powder
- Approx 125ml Water
Mix custard powder with a little water
Add all ingredients into a microwave bowl and cook till mixture thickens
Cool and spoon on top of cheesecake
How to turn an ugly duckling into a swan!
Cut into squares and garnish with berries of choice
The verdict - this MockUp Cheesecake was deliciously creamy and fluffy, and satisfied my craving for cheesecake. It was as close to a cheesecake as one can get when you have no cream cheese in the home!
Plus the fruit topping and berries turned it into a delicious but healthy dessert; a winner in my eyes!

Yum. I love passion fruit though hubs hates it... He hates the seeds. Haven't made cheesecake in ages. Been tending to do more custard and yoghurt cakes instead.
