They're part of the gourd family, a lot harder than zucchini and cucumber. The size is about the size of a hand and they look like when you cup your hands together, which is what we call them in Hong Kong - cup hand gourd. In Taiwan they're called Buddhist hand gourd, same meaning but more poetic 🙃.
Normally we cut them in chunks to make a soup, this is the first time I've had them grated, and got be to say it was a lot nicer.
Interesting. Thank you. It’s amazing how many different kinds of vegetables there are in Asia that people never learn about in America and Europe. Choyote looks like something I may have eaten in Okinawan food, but then again, maybe not.
