After several days without sharing due to health problems, today I bring you this delicious cake of pastry cream and mangoes in syrup that I made with much love for you. I hope you like it.

Después de varios días sin compartir por problemas de salud, hoy les traigo este delicioso bizcocho de crema pastelera y mangos en almíbar que realicé con mucho amor para ustedes. Espero les guste.

INGREDIENTS:


For the pastry cream:

  • 1 1/2 glass of liquid milk
  • 2 yolk
  • 1 tbsp vanilla
  • 100 gr of sugar
  • 2 tbsp cornstarch
  • Mangoes in syrup


For the cake:

  • 4 eggs
  • 120 gr of wheat flour
  • 120 gr of sugar
    1 tbsp vanilla


For the meringue:

3 egg whites
3 cups of sugar
1 tbsp of mantecado essence
1 a few drops of vinegar

Para la crema pastelera:

  • 1 1/2 vaso de leche líquida
  • 2 yema
  • 1 cda de vainilla
  • 100 gr de azúcar
  • 2 cdas de maicina
  • Mangos en almíbar


Para el bizcocho:

  • 4 huevos
  • 120 gr de harina de trigo
  • 120 gr de azúcar
    1 cda de vainilla


Para el merengue:

3 claras de huevos
3 tazas de azúcar
1 cda de esencia de mantecado
1 unas gotas de vinagre

  • We turn off and pour into a container and cover with a plastic.

PROCEDIMIENTO:

  • Lo primero que haremos será hacer la crema pastelera.
  • En una olla agregamos la yema y mezclamos con el azúcar.
  • Agregamos la leche y llevamos al fuego.
  • Disolvemos la maicina con un poco de leche.
  • Cuando rompa el hervor agregamos la maicina y batimos constantemente hasta conseguir un crema densa.
  • Apagamos y vertemos en un envase y tapamos con un plástico.

  • To prepare the cake, the first thing we will do is separate the whites and the yolks.
  • In a bowl we place the yolks and beat until forming a cream.
  • Add half the sugar and continue beating until it is very creamy and reserve.
  • In another bowl we place the egg whites and beat the sigh point.
  • We add the rest of the sugar and vanilla.
  • Then we add the beaten yolks.
  • With a hand mixer or paddle we incorporate the flour in an enveloping way.
  • In a previously greased and floured tray, pour the mixture and place in the oven at 180ºC for 30 minutes.
  • After the cooking time has elapsed, remove from the oven and let it cool.

  • Para preparar el bizcocho lo primero que haremos es separar las claras y las yemas.
  • En un bol colocamos las yemas y batimos hasta formar una crema.
  • Agregamos la mitad del azúcar y seguimos batiendo hasta que esté bien cremosa y reservamos.
  • en otro bol colocamos las claras y batimos punto de suspiro.
  • Agregamos el resto del azúcar y la vainilla.
  • Luego agregamos las yemas batidas.
  • Con un batidor de mano o paleta incorporamos la harina de forma envolvente.
  • En una bandeja previamente engrasada y enharina vertemos la mezcla y llevamos al horno a 180ºC por 30 minutos.
  • Transcurrido el tiempo de cocción, sacamos del horno y dejamos enfriar.

  • We wet the other half with the rest of the syrup and cover the cake.
  • We remove the excess pastry cream from the sides.

  • Cuando ya se haya enfriado el bizcocho, desmoldamos y picamos por la mitad.
  • Colocamos una mitad en la base para tortas, mojamos con el almíbar de los mangos.
  • Rellenamos con la crema pastelera y colocamos las lonjas de mangos.
  • Mojamos la otra mitad con el resto del almíbar y tapamos el bizcocho.
  • Retiramos el exceso de crema pastelera de los lados.
