Hi all my Hive Friends! How are you today? Now I would love to tell you a delicious dish with a long story about Hoi An where I am living, This dish is "Cao Lau". A dish worth enjoying because it has regional characteristics and You can't miss it when you come to Hoi An old town.
A dish that contains the whole history of the town.
Cao Lau Hoi An is a dish with delicious, unique taste and contains stories with a long history of the people here.it appeared in the 17th century. This is the time when the new port was exploited to exchange goods with foreign merchant ships. The land of Hoi An was discovered and traded by the Japanese first. However, the Chinese are the people who have long lived with Hoi An. And the Cao Lau dish is a perfect combination of many cultures.
Why is it called Cao Lau?
This is not only my concern, It is also the things interesting of tourists when visiting Hoi An. According to the old person story, In order to enjoy this dish, Hoi An merchants had to sit on a high floor to eat and take care of their goods.so it's called "Cao Lau", roughly translated into English as "high floor
Cao Lau - a pride of Hoi An Ancient Town, Vietnamese cuisine.
This is a dish similar to Quang noodles, also a specialty of Hoi An people in Quang Nam. But the way of cooking is more complicated and sophisticated. An American magazine has praised and recognized Cao Lau Hoi An as the greatest culinary treasure in Vietnam in 2014.
Cao Lau is processed in a very elaborate way.
The people who make Cao Lau have to take the ashes from Cham Island and soak them in water with rice, thus creating a crunchy texture with the characteristics of this dish to have been Aromatic of the special features to the color gold natural. After that, we have to soak Cao Lau fiber with water for a few hours and take it out and wash it. Especially, it must be boiled with water from Ba Le well in Hoi An (the water here is famous for not alum) and continue to cook until the noodles are cooked Then It is processed into light yellow fibers about 10cm long and 0.5cm thick. Nowadays you can buy pre-processed Cao Lau yarn available in the old town for faster processing.
pork belly-An indispensable ingredient
Besides, the indispensable ingredient for making Cao Lau is pork belly. Firstly, we have to choose a slice of delicious lean meat and marinate it with all the spices: garlic, onions, salt, little fish sauce, five flavors, chili sauce, salt sugar ...etc. and let the meat infuse for a long time. then we fry the marinated meat on both sides until golden brown and pour in the gravy and cook until the water thickens. The broth is used to make the sour sauce for Cao Lau, while the meat is thinly sliced and placed on top

After buying pork fat, we wash it with water a few times and then let it dry.
Next, we use a knife to cut the fat into small pieces. And it is put the cut fat in a bowl and marinate with 1 teaspoon salt, 1/3 teaspoon MSG, squeeze 1/2 lemon into the bowl, mix well and marinate for about 10 minutes to infuse the spices. Put the pan on the stove, turn the heat to medium, add the fat, stir well, beat for 10-15 minutes until the fat layer turns golden brown and the fat water has come out quite a lot, then turn off the stove and take out the fat. Oil absorbent paper.
bean sprouts and vegetables
You can choose fresh bean sprouts in the market, when we use them, just wash and boil water for about 1 minute. You can choose raw vegetables to eat with Cao Lau to enhance the flavor of the dish.

Please go straight to Mrs. Thanh Cao Lau-26 Thai Phien Street-Hoi An Old Town or Mr. Hai stay in 06a Trương Minh Lượng Street.Therefore, we should visit to Hoi An to enjoy the hot Cao Lau with the ancient space.

C ăn Cao Lầu ở Hội An lâu lắm rồi, ko nhớ rõ mùi vị nữa nhưng đọc bài của em về cách làm mới thấy sự công phu của món này. Sau này có dịp sẽ đi ăn
món này mình mua sợi cao lầu sẵn về làm cũng nhanh lắm nè c😋
Uh chỗ c ở ko có bán sợi này, để mấy hôm nữa đi cửa hàng bán đồ Việt xem có ko :)
