Today I bring you a delicious recipe with cassava (Cubans call it yucca). Almost every time we prepare it here in my country it is eaten the same way or similar, it is customary to boil it and when it is soft, pour a mojo on top and that's it. But today I wanted to try another way of eating it that, I anticipate, I really liked. I knew my son would love it. This way it can be a delicious snack at any time of the day, accompany a meal or serve to a guest. To make it, I used the following ingredients.

Hoy les traigo una deliciosa receta con yuca (los cubanos la llaman yuca). Casi siempre que la preparamos aquí en mi país se come igual o parecido, se acostumbra hervirla y cuando está blanda, se le echa un mojo encima y listo. Pero hoy quise probar otra forma de comerlo que, anticipo, me gustó mucho. Sabía que a mi hijo le encantaría. De esta forma puede ser un delicioso bocadillo a cualquier hora del día, acompañar una comida o servir a un invitado. Para elaborarlo, utilicé los siguientes ingredientes.
- 1.5 lb of cassava (manioc)
- 1/2 cup cornstarch
- 230 g white cheese
- 3 oregano leaves
- Cumin
- Sunflower oil
- Salt
- 1,5 lb de mandioca (yuca)
- 1/2 taza de maicena
- 230 g de queso blanco
- 3 hojas de orégano
- Comino
- Aceite de girasol
- Sal
Preparation / Preparación
In a deep casserole, boil the mandoca with plenty of water and salt. Let it cook for half an hour and, if it does not soften, give it a little more time, checking with a fork.
En una cazuela honda, poner a hervir la mandoca con abundante agua y sal. Dejar cocer durante media hora y, si no se ablanda, darle un poco más de tiempo, comprobando con un tenedor.
While the cassava is cooking, grate the cheese and cut the oregano leaves very small.
Mientras se cuece la mandioca, rallar el queso y cortar muy pequeñas las hojas de orégano.
When the yucca is completely soft, drain the water and put it in a glass dish. Remove the root from the center and crush it with a fork.
Cuando la yuca esté completamente blanda, escurrir el agua y ponerla en una fuente de cristal. Retira la raíz del centro y aplástala con un tenedor.
Add the cornstarch, the finely chopped oregano and sprinkle the cumin.
Añadir la maicena, el orégano bien picado y polvorear el comino.
Finally, add the cheese and sprinkle with salt if needed and knead until a compact dough is obtained.
Por último, añadir el queso y puntearla de sal en caso que se necesite y se amasa hasta obtener una masa compacta.
Divide the dough into portions and knead them in a cylindrical shape on a cutting board. Cut portions of approximately 3.5 to 4 centimeters.
Dividir la masa en porciones y amasarlas en forma cilíndrica sobre una tabla de cortar. Cortar porciones de 3,5 a 4 centímetros aproximadamente.
Flatten each taquito around the edges with a fork to give it a shape similar to a bow.
Aplastar cada taquito por los bordes con un tenedor para darle una forma parecida a un lacito.
Heat the oil in a frying pan and add the small lacitos and let them brown.
Calentar aceite en una sartén e ir incorporando los lacitos y dejarlos freir hasta que se doren.
Take out the little lacitos little by little and place them on paper towels to absorb the fat. Then, serve on a plate and serve with a little mayonnaise mixed with salsa brava to give it a spicy touch, this is to taste of the consumer, because they can be eaten without anything or with the sauce of your choice, they are very tasty.
Sacar los lacitos poco a poco y colocarlos sobre papel de cocina para que absorba la grasa. Luego, servir en un plato y acompañar con un poco de mayonesa mezclada con salsa brava para darle un toque picante, esto es a gusto del consumidor, porque se pueden comer sin nada o con la salsa de su preferencia, son muy sabrosos.

I use yucca a lot in different ways and especially when it doesn't soften I put it through the mincer and make fried foods, but I loved your recipe and I'm going to add it to my recipe book. I just tried this recipe and it's absolutely delicious! I didn't use oregano, but I'm curious about how it would taste with oregano. I'll definitely give it a try if we can harvest our cassava at farm.
