El conocer otras culturas no solo enriquece nuestra mente sino nuestro paladar, porque nos permite experimentar diferentes sabores texturas y olores, diferentes a los que conocemos y estando aquí en el Amazonas de Brasil conocí una fruta llamada Copoazú (Cupuaçu), cuando unos amigos brasileros me hablaron de esta fruta, contaban maravillas de ella y recuerdo la expresión de un niño cuando me hablo del helado, pude percibir que le encantaba.

Knowing other cultures not only enriches our mind but our palate, because it allows us to experience different flavors, textures and smells different from those we know and being here in the Amazon of Brazil I met a fruit called Copoazú (Cupuaçu), when some Brazilian friends told me about this fruit, they told wonders of it and I remember the expression of a child when he told me about the ice cream, I could perceive that he loved it.

¡El sabor que tiene esta fruta es único, si te gustan las frutas acidas, esta es la tuya, y tiene un olor bien marcado que perfuma todo, mi cocina estaba impregnada, ella tiene una corteza bastante resistente, puede tener forma redonda y también ovalada, por dentro es blanca y suele aprovecharse su pulpa e incluso la semilla!!

Con esta fruta se pueden hacer helados, jugos, mermeladas, un dato que yo no sabía es que esta fruta es prima del cacao y para saber que está listo su proceso de maduración, ella debe caer al piso sin ser arrancada.

¡Quiere decir que si quieres comer copoaçu debes, cazarla y esperar su caída, suena cruel, pero es asi!! (chiste malo)

Los beneficios que esta fruta aporta, contiene propiedades diuréticas, antioxidantes y antinflamatorias, así que tenemos razones de peso para consumirla.

¡Por otro lado, como yo soy una fan más del chocolate y sabiendo que son primas, decide juntar estas dos!!!

¡Ahora bien, yo quise hacer un helado de Copoazú (Cupuaçu) y quiero mostrarles el paso a paso, así que vamos… Manos a la olla!!!

Elaboración de la crema de Cupuaçu / Preparation of the Cupuaçu cream

Paso 1. Como mencioné el cupuaçu es duro, tiene una corteza como de terciopelo duro, debes romper con la ayuda de un martillo, por dentro es blanco sale entera como te muestro en la foto.

Step 1 As I mentioned the cupuaçu is hard, it has a crust like hard velvet, you must break it with the help of a hammer, inside it is white, it comes out whole as I show you in the photo.

Paso 2. Esta fruta está formada como con motas de algodón, son bastante suaves, eso es lo que representa la pulpa, empezamos a recortar con una tijera y te darás cuenta que tiene una semilla, con ella se puede hacer chocolate, lástima que no supe a tiempo y las descarte.

Step 2. This fruit is formed as with cotton flecks, they are quite soft, that is what represents the pulp, we start to cut with a scissors and you will notice that it has a seed, with the seed you can make chocolate, too bad I did not know in time and discarded them.

Paso 3. Coloque toda la pulpa en un recipiente con tapa, congelada puede durar hasta 3 meses.

Step 3. Place all the pulp in a container with a lid. Frozen pulp can last up to 3 months.

Paso 4. Para elaborar la crema, en el vaso de la licuadora agregue la mitad de la crema de leche y la leche condensada, luego agregue el resto de la crema de leche, esto facilita que quede muy cremosa, también previamente coloque la crema de leche en el congelador, es opcional.

Step 4. In the blender cup add half of the cream and condensed milk, then add the rest of the cream, this makes it very creamy, also previously place the cream in the freezer, it is optional.

Paso 5. Fui agregando la pulpa de cupuaçu poco a poco para ir probando que la crema no quede tan acida sino con un gusto agradable, ¡ten en cuenta esta fruta es bastante acida!

Step 5. I added the cupuaçu pulp little by little so that the cream would not be so sour but with a pleasant taste, keep in mind that this fruit is quite sour!

Paso 6. Coloque en vasitos desechables y lleve a congelar aproximadamente por 4 horas.

Step 6. Place in disposable cups and freeze for approximately 4 hours.

BASE DE CHOCOLATE

Paso 1. Derretí el chocolate a baño de María y agregué una cucharada de mantequilla al chocolate

Step 1. I melted the chocolate in a double boiler and added a tablespoon of butter to the chocolate.

Paso 2. Usé el mismo tamaño de vasos para hacer el molde, pero por fuera, de esa forma entrarían los heladitos que ya tenía en el congelador, fui formando con la ayuda de una cucharita pequeña, debe quedar una capa más o menos gruesa ya que esto le dará resistencia a la base y no se te van a partir.

Step 2. I used the same size of glasses to make the mold, but on the outside, that way the ice cream that I already had in the freezer would fit, I was forming with the help of a small spoon, it should be a more or less thick layer as this will give strength to the base and will not break.

Paso 3. Luego de tener listo nuestras bases llevamos al refrigerador por media hora, el chocolate endure rápidamente.

Step 3. Once our bases are ready, we take them to the refrigerator for half an hour, the chocolate hardens quickly.

Paso 4. Formamos procedemos a desmoldar las formas y colocamos nuestra mezcla que hicimos con cupuaçu, coloque por encima ralladura de chocolate.
