I'm convinced the local restaurant will update their menu to include at least one salad as a main course as more and more clients give positive feedback in regards to the freshness of your produce. I feel this too. They charge €12 for their salad starter so I would say they are making pretty decent returns and this will only increase if they sell bigger plates! Also, the French are a funny bunch and a lot of them only eat salad in the summer. It's their way to be 'healthy' so the demand is going to grow once we pass the solstice.
