Welcome to my first ever klarayle’s Food Blog! For today's blog, I wanted to share to you guys a vegetable stir fry recipe. We call this dish in the Philippines as "chopsuey".
Growing up, I always remember that I did not like eating vegetables. The thought of it alone makes me nauseous and my mother would always come and rescue me. (of course, Our Mother is always the best!) She would allow me to eat fried egg instead of the vegetables and fish, which I don't like to eat. Yes, this may not seem to be a good way to tolerate picky eaters but it maybe was just her way so I could eat something during dinner.
When my parents passed away, my aunties are the one who took care of us. It was indeed a big change in my life. I have to adjust to certain things, and I have to abide to their house rules. And one of them was not to choose what food is on our table. They have taught me that, the things on the table are the fruit of hard work. Which I believe true to its sense. And from then on, I never choose again the food that was being served on the table not only for our hard work but also to the people who works hard to give us something to eat; our farmers, fisherman and many more.
Chopsuey, is a sautéed vegetable mixed in with some meat or chicken, or if you opt to just simply pure veggies. Correct me if I am wrong but I believe that this cuisine was influenced by the Chinese from our ancient history.
Main Ingredients that you will need:
Garlic-3 cloves
Onion-1 used one red onion
Carrot-1 piece
Chayote-1 medium size
Broccoli-1 medium size
French Beans- 1/4 cup
Oil-2 tbsp
Oyster sauce-5 tablespoon
Soy sauce-2 tablespoon
Optional: For tonight, I will be using chicken gizzard and chicken hearts as requested by my brother.
Remember: You can keep this as vegetarian if you want to, and just other vegetables available in your fridge such as bell peppers, mushrooms, cauliflower and so on.
If you want to add meat; you can use any meat of your choice or just even quail eggs.
First step is we need to sauté the garlic and onion. I then add the chicken gizzard and hearts. When they are all combined or mixed, I added the oyster sauce and soy sauce. Pour some water(not too much!) then let it boil until the meat is tender.
When the meat is ready, I added the vegetables. I first add the Chayote that will take a little more time to cook. After a few minutes, I added the Carrots. Mixed in with the Broccoli and the french beans.
When the veggies are almost done cooking, I added the salt and pepper to my liking. I am hypertensive so I am trying to put less salt on what I usually cook. When the taste is perfect, I will add the slurry to thicken up the sauce. This will be best if vegetables are half cooked, but since I am feeding this to my children I have to cook it until it is soft enough to be eaten by children. Lastly, serve with rice. (Asian community will know, Rice if life)
I think my son approves and I am glad that at young age I could instill to his mind the importance of the grace on our table.
