Agree on this one. I totally appreciated Pho as a breakfast as well honestly. Super rich in flavour but easy to digest and a good start of the day. Making it yourself is not even that difficult it seems, you just need tons of hours to get the perfect stock.

I understand what you mean on more fresh. It is funny tht most of these dipsauces are based on fisdhsauce which is so much more soft and less fishy than the fishsauce we know here. Adding spice....yeah that is a choice then..But the base of the sauce is sweet in general!
