It is more of a garlic mayonnaise, I prepare it with a raw egg, I add a tablespoon of vinegar, one of mustard, salt and pepper to taste, a medium head of garlic, an optional pinch of cumin, and 250 ml of olive oil, I process everything with the hand blender for a couple of minutes and I obtain this delicacy, perfect to accompany toasted bread, and these sweet arepitas.
