Here is an easy recipe with a summer vegetable: Rhubarb cake!

This recipe consists only of three steps: making the batter, making the rhubarb paste and making a cake of it by putting everything together and baking it!

Rhubarb is a vegetable that you can find in the supermarket in the beginning of summer. I never had the chance/ time to make a recipe with this vegetable, until now!

Ingredients:
2 egg yolks
150 grams dairy butter
350 grams wheat flour
4 spoons sugar
500 grams rhubarb
150 grams jelly sugar
40 grams almond flakes

First step. Making the batter:
Cut the dairy butter in small blocks, put one egg yolk and the wheat flour and sugar with it and mold it with your hands into two balls, a smaller one and a big one. The big ball for the bottom of the cake and the small ball to put it on top.

Put it in the fridge for one hour. At the end of the hour, set the oven to 200 C degrees (400 fahrenheit).

Second step. Making the rhubarb paste:
Clean the rhubarb by cutting the ends and take a little of the jacket off. Cut the rhubarb in small pieces. Mix it with the jelly sugar and almond flakes.

Third step. Put it all together:
Butter a cake pan. Take the big ball of batter and make a nice bottom for the cake in the pan. Divide the rhubarb paste all over the bottom. Crumble the smaller ball of batter over the cake.

Put the cake in the oven for 40 minutes.

I brought the cake as a gift during a visit. She also never tasted rhubarb cake before and we both agreed it was delicious. The taste is both sweet and fresh. What do you think?
