Our last Saturday started with scrambled eggs for everyone. My version was fairly simple, just beat the eggs with some added salt, heat up the pan and added in generous amount of butter. Added in the whisk egg and with super low heat and patient, slowly move the egg around in twirly manner till the eggs were cooked. As usual, Saturday was a lot of cleaning housechores like cleaning toilets, wiping dust and changing bedsheets. After that, we went to visit my Aunt.
Fixing her fan!
Her fan had been making lots of sound, I had helped her check few days ago and noticed some crack at the blade. I bought her a new one and helped her fix. Her fan was so old that for a kickstart, she needed to 'jilt' it to move. Haha!
Her sumptuous lunch for us!
Wow, she said she felt better this week as in lesser leg pain, so she wanted to cook more for us. Such delicious meal.
She cooked for us a herbal soup with pork, stir fry prawns with vegetables and braised chicken drumsticks with potatoes.
Herbal Soup with Pork
She used a combination of pork neck and pork bones to cook this hearty soup. In it, there were dried red dates, goji berries, a lot of dried longan, Solomon's zeal, Chinese yam, lotus seed and Chinese barley. She said all these can nourish our blood and nervous system. Hurray! It was so mouth-watering that I drank two bowls. Opsie!
Stir fry prawns
She said the prawns that we bought that day were so fresh and she must cooked them for us. She stir fried the prawns with yellow capsicum, carrots, cherry tomatoes, English gourd and fish beancurds. Super super delicious! Just basic Chinese stir fry with some sesame oil and garlic, oyster sauce and chicken stocks. Yums!
Braised chicken drumsticks with potatoes
Firstly, she browned the chicken as well as steamed the potatoes separately. After browning the chicken and steamed the potatoes, she would leave them aside while moved on to make the sauce. The sauce was made with garlic and onion oil, also with soy sauce and oysters sauce, and with special sauce Worchester sauce and some flour. After the sauce was done, she would mix all the chicken, potatoes and sauce together and into the oven for 20 minutes at 195°C. These chickeb drumsticks were so nutritious. Juicy meat, yums!!!
Love home-cooked food like this
We had some time to chat and to finalise her upcoming appointments. I also told her to go week by week so not to overwhelm herself with all the appointments ahead of her. She was seriously thinking of going to old folks home because she prefers not to be alone at home. She felt she will be happier with peers of the same age doing activities together daily. Let's see what can we do on that.
For dinner, I still had my marinated chicken and mashed potatoes in the fridge, so let's get those chicken air fried and heated up the mashed potatoes with some cheese and added in hard boiled eggs too. Thankful that the boys were eating and growing well.
