Cooking Budget Chicken Noodle Soup

Okay, I am halfway through the month in committing myself to cook more at home. Safe to say, we managed to save few hundreds by cooking at home, also I tried to cook using as cheap ingredients as possible, or try to purchase the meat at discounted price. Alrightee, I had two chicken thigh in the freezer, what to cook? Let's cook noodle soup

This brought back lots of memories during my college time, as well as during my young working adults season, when I needed to be on very tight budget. I always cooked chicken soup, either ate with rice or noodle. It was a super wallet-friendly meal, yet you got to have protein, carb and vegetables.


Chicken Noodle Soup!


Ingredients

I tried to use whatever leftover I had for this week.

  • two chicken thighs
  • one big onion
  • garlic
  • dried anchovies
  • spring onions

Let's make the soup first

In a pot, added some water, and add in the big onion, garlic and dried anchovies and let this boil for half an hour.

Then, the chicken went in for another half an hour. Towards the last 5 minutes, I also added in the spring onion for extra fragrant.

This time, I decided to discard the big onion, garlic and anchovies to achieve a clear clean soup. The chicken remained.

Then, I noticed I did not have any vegetables at all, haha, not even carrots or potatoes. So, I added in beancurd sticks☺️, anything to make do, "here goes nothing".

My eldest son came and suggested me to add in some garlic oil and onion oil. I looked at him and told him I wanted clear soup. But he looked back at me with puppy face and said he wanted the garlic oil and onion oil. So yup.... "Here goes nothing" again...

Lastly, seasoned the soup with some salt and pepper.

The noodles

I used this brand of noodles which I find is the best noodle I had ever tried. The tanginess and the savouriness of the noodle helped to make your noodle soup tastier.

Just boiled the noodle accordingly until soft to your liking, we like it al dente.

I then sliced the chicken meat just like the way noodle shop's chef did it.

Let's serve!

Scoop the desired amount of noodles and arranged the desired amount of chicken on top.

Scoop the desired amount of soup and the beancurd stripes onto the noodles.
