Chicken & Minced Pork Ball Soup with rice and macaroni

My youngest son and I had sore throat 😞

Let's cook soup then...

I bought chicken ribs last week due to having some promotional price and had debone the chicken ribs meat, leaving the bones behind to cook soup. I also had two fish bones kept and cleaned qearlier to cook soup too. So, I was using chicken ribs' bones and fish bones as base flavour for the soup-of-the-day!

Steps of cooking

Firstly, boiled the chicken bones in a pot with some big chunks of celery stalk, and one big onions. I slow boiled it for one hour.

After that, I added in some garlic oil and onion oil for extra fragrance. It was still a little under taste after seasoning with salt and pepper, so I decided to add in some mushroom seasoning.

Once the soup base was done, discard some of the celery stalks. I then took out the bones and stripped out remainder chicken meat from the bones.

Diced the vegetables for the soup to be added in too.

I had marinated minced pork, so now was the time to make minced pork ball to be added into the soup for extra flavour and sweetness.

After the minced pork balls were cooked, I added back in the shredded chicken meat I stripped from the bones. Now, this pot of soup has pork and chicken, yay!

Next, the boys as usual asked to add in some fish balls. Thank God I had it so fish balls were in too!

Let the whole pot simmered for another 10-15 minutes till the vegetables were soften. There we had it, a hearty pot of chicken and minced pork ball soup!

We ate this first round with rice for lunch, after that, for dinner. Yums!!!

Second round!

For dinner, I used the same pot of soup. It was running low on minced pork ball, so I repeated the same thing, adding minced pork ball. This time, I also added in some pork belly...

even more flavourful soup for dinner!

For dinner, we had a change, instead of eating with rice, we ate it with macaroni. Always give thanks for simple one-pot-dish like this which I could cook at home. Cheap and nutritious. Hope our sore throat would be well soon.

From my previous experience, I was taught by doctor that whenever children have sorethroat, abstain from taking hot drinks which will cause further inflammation. Instead, drink some cold drink (not the extremely icy type) and some yoghurt or ice cream. So myself and youngest son went for a fast frozen yogurt. Yums!

Thanks for this reminder of using honey. I totally forgot about it and just gargle with salt water besides taking sore throat lozenges.

Salt water is also a good option , lozenges are temp relief I am also keeping this😊
