Hello friends, today I participate again in the Hive Creative Contest initiative of @zord189 with the support of @foodiesunite, I leave here the link of the post so that you can read the slogans and participate in it.

The recipe that I'm going to share with you is: Stuffed eightball Zucchini

La receta que les voy a compartir es: zapallito relleno

The first thing we must do is wash all our vegetables very well. I will use bell peppers, onion, garlic, leek and mushrooms for the filling.

Lo primero que debemos hacer es lavar muy bien todos nuestros vegetales. Yo utilizaré morrón, cebolla, ajo, puerro y champiñones para el relleno.

In boiling water we blanch our squash for 10 minutes and then remove them and let them cool well.

En agua hirviendo blanqueamos nuestros zapallos por 10 minutos y luego los retiramos y dejamos enfriar bien.

We cut the vegetables that we are going to sauté. First the bell pepper with garlic will go to the pan, then the onion, leek and finally the mushrooms.

Cortamos los vegetales que vamos a saltear. Primero iran a la sarten el morron con el ajo, luego la cebolla, puerro y por ultimo los champiñones.

When the squash are warm we can cut the top and with a spoon hollow them out.

Cuando los zapallos estén tibios ya podemos cortarle la parte superior y con una cuchara ahuecarlos.

Don't throw away the filling!
This will also go to the pan with the other vegetables.

¡No desheches el relleno! Éste irá también a la sarten con los otros vegetales

It had some boiled rice so I added it to the mix too

Tenia un poco de arroz hervido asi que se lo agregué tambien a la mezcla

When the mixture is ready, we begin to fill the squash with a spoon, and I also added a little cheese on top.

Cuando la mezcla esté lista comenzamos a rellenar los zapallos con una cuchara, ademas yo le agregué en la parte superior un poco de queso.

Baking time, it is only so that the squash is more tender and the cheese melts.

Momento de hornear, es solo para que el zapallo quede mas tierno y el queso se derrita.

And that's it! from the oven directly to the plate! It is really very easy, delicious and yielding.

Y eso es todo! del horno directamente al plato! es realmente muy facil, delicioso y rendidora.

En realidad no es un zuccini, es zapallito, pero no me aparecia la traduccion exacta jaja no se como le diran donde tu vives!

This recipe I'm certainly going to try as I'm always looking for ideas on how to serve squash, this could be a nice light meal all on its own!
