Going the extra mile

If there's one thing I can say for sure, it's that I really don't feel like cooking every day. Often I am busy and cooking food is really just an annoying side effect that drives me away from my activities. But sometimes, sometimes there is one of those days when I suddenly feel the urge to try something, or to go the extra mile in the kitchen. Then I feel like making something beautiful, and I like to do some breakneck tricks to get that done.

No higher mathematics required

Now you shouldn't immediately think of a recipe that requires higher mathematics to understand when you go through those breakneck feats. No, I usually don't even start. The breakneck feats have more to do with my three adorable shepherd monsters who keep me company everywhere, but for some strange reason, they stick even closer to me than usual in the kitchen. It must be for a reason. Now I have to admit that I can hardly resist the pleading, eager looks on those snouts. So you probably already understand where love comes from. Something often falls off the counter for them once I'm busy. And they know that trick very quickly. Today, however, they were unlucky! Oh dear, drama for the dogs! And drama for me to create a good place for myself! But once that was done I could start!

Two things I don´t like at all

And my idea today was to surprise my partner once. I have to tell you that I then started eating vegetarian, but that there are really a number of things that I hardly ever, or even never eat at all. And let that just be something my partner likes to eat. Mushrooms are one of them, and the other is Spinach.

Spinach

The mushrooms were not on my program, so the surprise had to come from the spinach. And that surprise has succeeded after breakneck efforts in the kitchen. The recipe is not difficult, you don't have to worry about that. It takes some time to prepare. But then you have something! For me, the difficulty was more about looking out for where to put my feet. Right next to and behind my feet, 3 dog muzzles were waiting patiently.

Well, what do we need today?

  • 400 gr potato slices
  • 200 gr fresh spinach
  • 1 onion
  • 1 paprika
  • 2 cloves of garlic
  • 4 eggs
  • 200 ml crème fraiche
  • salt and pepper
  • 1 tsp cumin
  • 1 tsp turmeric
  • grated cheese

Let´s get this started

Start by preheating the oven to 200 degrees. Pour a dash of oil into a pan and fry the potato slices for about 10 minutes.

Chopping

Meanwhile, chop the onion, cut the paprika into cubes and finely chop the garlic.

The next step

Remove the potato slices from the pan and sauté the onion, garlic, and bell pepper. After a few minutes add the spinach and let it wilt. Turn off the heat and mix in the potatoes.

It´s starting to look like something

Grease an oven dish and put the contents of the pan in it.

Last preparations

Beat the eggs together with the crème frache and herbs. Pour the egg mixture into the baking dish and sprinkle the top with grated cheese.

Ready to go

Then the frittata can go in the oven for about 30 minutes. And me with 3 disappointed dogs outside to play. You have to give them some to make up for the fact that nothing fell off the counter today.

Don't forget the time, so after half an hour go back inside and take a look in the oven. I thought it could be a little longer, so after an extra 10 minutes I looked again, and then I was completely satisfied with what I saw. The result was a beautifully baked FRITTATA WITH SPINACH AND PAPRIKA.

Everyone enjoyed it

If you want, you can serve a baguette here with some salad or aioli. I didn't make it that luxurious today, but my partner was also completely satisfied without it. And yes, of course, the dogs were also allowed to taste after we had finished eating. They have also approved it… and no, they are not being spoiled. LOL.

I almost heard them thinking, It's about time you started making a cake again¨ .. so I'm afraid that will happen again soon.

I do this quite often, especially when I have some fresh baby spinach leftovers lol.. so good! Just as is or on a baguette both will do for me :)

I never liked spinach, so I just don't buy it. Every now and then you have to do something to keep the partner happy, and this did it. Lol

Looks absolutely delicious and not terribly difficult to prepare based on your awesome photos and step by step directions. Perfect during Lent for a meatless meal too! @hetty-rowan

To save time one could slice the potatoes as well as chop the onions, red peppers and garlic the day before you plan to make the fritatta and refrigerate the ingredients in a Tupperware container.🥔🔪👩‍🍳 🌶

Seriously, any time I see the words creme fraiche it's like a culinary tractor beam, I get drawn in. Then again, I am probably going to be always drawn in every time you post a food post because your recipes look so dang super yum!

That said fritattas are some of my favorite things to make, your spice combinations and those gorgeous photos have me wanting to grab out a cast iron skillet and fire up the oven lol! Thank you so much for sharing this!

Of course the puppers get a taste too! They're just too cute to not let them have a taste. And when you see their grateful muzzles, ... It's never a waste. Although they don't love everything.

Today I was making a banana bread, and gave them all a little piece of a banana. They didn't like that. But as soon as the banana bread came out of the oven, and we got a slice of it, they wanted to have their slice too. This time we were like, "sorry puppers, you didn't want the banana, you don't get the bread".

looks great, definitely going to give it a go. How many servings will it make, and how long will it last once made.

We could eat this for a day, but my partner is a big eater. So he had 2/3 of this, and I had 1/3. If you are not a small eater I think you can have 3 servings, and for small eaters it could be 6 servings.

You can keep it in the fridge for about 3 days, or in the freezer for 1 month. But I don't recommend freezing this because it doesn't improve the taste, and it dries out, which you don't want. For me, this is something you have to make and eat on the same day. Or the day after.

Thanks, living alone as I do, I can see that being enough for two days meals so suits me perfectly, and an extra recipe to my repertoire to boot.

Oh definitely yes. For 1 person it's sure enough for two days. Depending how much you eat, but maybe even 3 days.

Jokes aside, I love seeing these recipes posts. I actually do follow some of them from time to time. It's really great seeing these recipes written by actual people and not those fancy chefs who ask for your recipe to have some crazy ingredients like a herb only grow on Everest two months a year and it needs to be slightly bitten by a 7 month old giraffe or something. lol!

With noodels you can never go wrong!

But jokes aside, yeah, you are so right. All the fancy chefs with their crazy ingredients don't make it easier. But since we're so lucky to have Hive, and a Foodies place. We can start the revolution and show the real deal with ingredients that you actually can manage to get your hands on. And all without the need to wait for the first day in spring to pick the one white flower on the left side of the 3th corner on the way to the top of the Mount Everest.
