Hello friends, happy weekend, here is a very tasty recipe to enjoy with the family and it is some delicious spring cakes, I hope you like them and are encouraged to make.

Hola amigos, feliz fin de semana, aquí les dejo una receta muy sabrosa para disfrutar en familia y se trata de unos ricos pastelitos primavera, espero les gusten y se animen hacer.

Ingredients for the stuffing:

1/2 small cabbage, julienned.

½ zucchini julienned.

1 medium carrot grated.

1 bunch of chives, chopped small.

Salt and sugar to taste.

Cheese.

Ingredientes para el relleno:
1/2 repollo pequeño picado en juliana.
½ calabacín picado en juliana.
1 zanahoria mediana rallada.
1 manojo de Cebollín picado pequeño.
Sal y azúcar al gusto.
Queso.

Ingredients for the dough

2 cups of wheat flour.

2 tablespoons of sugar

1 cup of ice water.

Some baking soda.

Salt to taste.

Ingredientes para la masa
2 tazas de harina de trigo.
2 cucharadas de azúcar.
1 taza de agua helada.
Un poco de bicarbonato.
Sal al gusto.

Steps to follow:

We will start by making the sauteed vegetables for the filling. In a pan with a little hot oil we will first put the cabbage, let it cook for five minutes and put the chives, cook another five minutes and add the carrot and zucchini, cover and let them steam for 20 minutes, but move regularly so they don't stick. When it is ready we take it out in a container to cool.

Note: the vegetables are not cooked together from the beginning because each one has its cooking time and no water is added because each vegetable contributes its own juice.

Pasos a seguir:
Comenzaremos por hacer los vegetales salteados para el relleno. en un sartén con un poco de aceite caliente pondremos primero el repollo dejaremos cocinar cinco minutos y pondremos el cebollín, cocinaremos otros cinco minutos y le agregamos la zanahoria y el calabacín, tapamos y dejamos que se cocinen con el vapor durante 20 minutos, pero se mueven con regularidad para que no se peguen. Al estar listo lo sacamos en un envase para que se enfrié.
Nota: los vegetales no se cocinan juntos desde el principio porque cada uno tiene su tiempo de cocción y no se le agrega agua porque cada vegetal aporta su propio jugo.

We now make the dough. In a bowl we put all the dry ingredients, we move and then we add the ice water, we stir until we have a compact mass, we put it on a flat surface to work it until it does not stick in our hands, we let it rest for 25 minutes.

Pasamos ahora hacer la masa. En un bol ponemos todos los ingredientes secos, movemos y luego agregamos el agua helada, removemos hasta tener una masa compacta, la ponemos en una superficie plana para trabajarla hasta que no se pegue en nuestras manos, dejamos reposar 25 minutos.

After time we spread the dough and cut squares to taste to assemble the cakes, fill with the vegetables and cheese, fry in plenty of oil, let it rest for five minutes and serve.

Pasado el tiempo extendemos la masa y cortamos cuadrados a gusto para armar los pastelitos, rellenamos con los vegetales y el queso, freímos en abundante aceite, dejamos reposar cinco minutos y servimos.

These spring cakes are good, I think their filling can be varied in a thousand ways, such as with chicken, meat, beans, among others. Good step by step. Greetings.
