Good morning everyone,
This morning I decided to have ekuru for breakfast. Ekuru is a yoruba traditional food. Its even the food usually eaten during twins traditional festival and its usually eaten with spicy peppered sauce. I call it beans bread because its as soft as bread upon its preparation and its made of beans.
PREPARATION
To prepare the ekuru beans is usually used. First the beans is soaked and dehaul. Once the outer part is removed, it is further soaked until the beans is so soft that you can cut it with fingers. After that, it's been grinded on a grinding machine and doing this process, no water is to be added. It has to be thick after grinding. Once water is added and its watery, the food is spoilt. After grinding, the thick beans paste will be mixed using a stick or hand. It is mixed in a circular motion continuously until it rises and becomes real soft. Soft in such a way that when you put a drop of it inside water, it floats. After that, it's been poured inside banana leaves, covered and placed inside hot water and cooked. Once it's cooked, it becomes solidified but very soft too.
The paper sauce is then prepared by frying roughly grinded scotch bonnet Peper and onions with palm oil.
Since the method of preparation is a bit stressful, it's usually eaten as dinner but some people sell it in the morning. They wake up early in the morning to prepare it and fortunately its been sold in our neighbourhood. That's where I bought the one I ate this morning.
They prepared it initially on a charcoal fire but to speed it up, they later transfer it to a gas fire as seen above.
Inside they sold the sauce in a nylon.
The food is hot cake, as you can see other people were waiting to buy it too.
There are different ways of eating the food. Some eat it directly from the leave, some peel it out from the leave and eat while some break the ekuru, add the sauce and salt and mix them together before they eat. Some even eat theirs with our soup but I eat mine with the sauce alone by breaking and mixing the ekuru with it.
