HIve there, hola a todos!!!
Good Sunday to all! Today I'm back with a super easy recipe, quick to make, with very simple and inexpensive ingredients and of course, super delicious. As if this were not enough with the super food that is spinach, source of iron, super important food to include in vegetarian diets.
This time it is not suitable for vegans because it includes egg, but I promise to make an equivalent recipe in its vegan version next time.
Without much further ado, I will tell you what you need and the step by step.

Buen Domingo para todos!! Hoy estoy de regreso con una receta super fácil, rápida de hacer, con ingredientes muy simples y económicos y claro, super deliciosa. Por si esto fuera poco con el súper alimento que es la espinaca, fuente de hierro, alimento súper importante para incluir en dietas vegetarianas. Esta vez no es apto vegano porque inlcuye huevo, pero prometo una próxima oportunidad hacer una receta equivalente en su versión vegana. Sin muchos más preámbulos paso a contarles lo que necesitan y el paso a paso. |

1 bunch of spinach (it could also be chard). 1 onion (I used half purple and half white onion). 1 clove of garlic. 3 eggs. 1 cup of flour. Oil for frying. We will use the spinach leaves. Once washed we will chop them small.
Chop also the onion and garlic.

Put everything in a bowl and integrate. Season with salt and pepper.

In a separate bowl, beat the eggs. I started with two and then I had to add one more.🤣

Add the eggs to the vegetable mixture. I added heavy cream here because I had some, but it's not necessary. It's also optional if you want to use less egg and add milk.

Add the flour and integrate until a homogeneous mixture is formed.

With the help of a spoon form croquettes and pour them into hot oil.

⭕️ It really is a dish that takes no more than 15 minutes to prepare. With this recipe I got 15 fritters, we ate 4 people and there were some left over. Yielding, isn't it?
