This is delicious! I love homemade and I actually like making it, and it is so nice to see how you do it. I like to fast forward the pasta when I am running short on time, but, usually, let it go on the rack. It is a great time-saver, but, I found I usually have other things that need to get done and forget I can do that.

A while back, I did on one on lasagna bolognese( my fave sauce!) but, love, love, love the alfredo for how it is simple and no fuss. (I LOVE that part of it, plus it tastes dang good!) I have used a pasta machine since I left home (gratis grandma!) but, when I have lived in temporary quarters, I have cut it by hand... I can remember thanking God for such modern conveniences as pasta machines. Ha!!

It's definitely worth the extra work to make homemade pasta. So fresh and delicious. It's all the better if you like doing it as well. The machines are definitely a life saver. We cut it by hand once with a pizza cutter and I'd say it took an extra hour - easily. Maybe even more lol. Never again. Haha

I used to be in a location for work for one or two months, so it was more a need than a want. :))
