Truquitos to make Cachapas..
Happy and extraordinary Friday night my good people of hive, Today I want to share with you a special recipe, it's about how I make the cachapas with cheese, normally I prefer to buy the corn peeled, cleaned and ground because that's how my mom taught me, I never bought the ones that come already ground and now I understand why.
When you grind it yourself you make sure that the corn is well crushed, however when you buy it, these days I felt like eating some cachapas but I only got ground corn and I said to myself that it must be the same and it turns out that when I go to prepare it, the grains were almost complete.
To solve it quickly I threw all the dough in the blender and let it blend for a while so that the corn would be well ground.
Then I passed it to the container where I was going to prepare it, the first thing I added was sugar, then oil, salt, I stirred it well and a little trick to compact well a touch of wheat flour and another to avoid gases a little bit of baking soda.
I am a lover of cachapas, I like them incredibly, I think that if it were up to me I could eat them every day, once the dough is ready I add the tusa and leave it in the fridge while I prepare the budare where I am going to cook them.
Another little trick that my mother taught me and which works very well so that they don't turn easily is to burn the rice grains in the dudare, once they are well toasted, remove them and put them in butter to place the dough.
