Excellent recipe. I had a friend from Iran. Their home was on the bank of the Caspian sea. We used to roast chicken under burning charcoal (during 1990-1994). We had prepared it with a lot of delicate spices and without spices. The taste was hardly any better with spices. We found that "salt" is an essential item to make it tastier.
