Squash Okoy-My son's new favorite vegetable dish

Hello Everyone. It’s been a while since I last published an article in this community. While I enjoy cooking, I often refrain from taking photographs during the process. I am often pressed for time when preparing breakfast or dinner. This time, since it was my first time cooking that particular recipe, I seized the opportunity to take some pictures.
My recipe is about Squash Okoy. Okoy is a term for Filipino Crispy fritters, a beloved Filipino treat, that is deep-fried to perfection.

Here are the ingredients
Squash
All-purpose Flour
Cornstarch
Water
Egg
Onion
Garlic
Oil

1st step -remove the skin of the squash


2nd step- shred the squash


3rd step after shredding the squash add the flour, and cornstarch and then mix it


4th step- crack and mix the egg then add the egg and a little bit of water to the squash mixture

5th step- chop the garlic and onion into small pieces and add them to the squash mixture.


Mix everything properly

Cooking time
In a pan, heat the desired amount of oil, then add a scoop of the squash mixture. Allow it to cook until it achieves a golden brown color on one side before carefully turning it over to cook the other side.

After cooking the squash okoy, I created a delicious sauce using vinegar and onions.

In my initial experience cooking that particular recipe, I was delighted to discover that my family, particularly my son, enjoyed it immensely.

It fills me with joy to have discovered a new recipe that has become my son's beloved dish.

As a mother to a toddler who is selective about their food choices, I faced the challenge of finding ways to make vegetables appealing and enjoyable for them. While my son enjoys eating vegetables, he has a particular aversion to leafy greens. I'm on a quest to find innovative and enticing ways to prepare leafy vegetables so that he'll embrace their consumption.

Okoyyyyyy \(^o^)/, it taste super good too with shrimp. I haven't tried okoy like this but it looks yummy too. Sarap nyan sa suka. Huhu. Bigla ako nag crave!

Mas bet ko pa ang squash kaysa shrimp 🦐 hehehe

Never though squash would go well as fritters! will have to try this next.
