In today's post I will share a version of a typically Brazilian recipe, easy to make and very tasty, we call it "Arroz de Carreteiro".
"Arroz" means rice and "Carreteiro" is a word used to refer to the people responsible for transporting cargo. So, as they stayed out of their homes for a long time, they made this recipe that ended up earning their name in honor
The original recipe is made from dried beef, but in this version, also widely reproduced, we will use meat from the previous day's barbecue. 😁
The ingredients to prepare, serving up to 4 people, are as follows:
- 300 grams of meat (here you can put more or less, it depends on your taste, I used a mixture of sausage, beef, pork and chicken).
- 1 medium onion cut into cubes
- 2 cloves garlic diced
- Half a yellow bell bell pepper
- Parsley
- Chives
- 3 tablespoons of tomato extract
Step 1:
Cut the Chives and the parsley into very fine and small pieces, then set aside:
In a pan add a tablespoon of olive oil and the chopped onion and garlic, brown for about 2 minutes over low heat:
Then add the bell bell pepper:
Step 2:
Add the rice and leave on low heat for about 2 minutes more, then add the cut meats:
Add 3 tablespoons of tomato extract (I forgot to take a picture of the tomato extract along with the other ingredients), the parsley and the scallions and mix well:

Step 3:
Add water to the pot (about 2 and a half times the container you use to measure the amount of rice, in my case I put 2 and a half cups of water) as long as it is enough to cover all the rice:
Step 4:
Let it cook in low heat with the pan half covered for about 15 to 17 minutes until the water dries up and the rice is ready, add a little more scallion, let it rest for about 5 minutes, at the end it should look like this:
Mix and serve.
