Mini-baked Sponge Cake with Ceres Toppings

Hi Hivers!!

Nice to greet you back in my blog. Today I want to share a recipe for making a mini-baked sponge cake. As the fasting month is almost over and Eid is just around the corner, this week will be a busy week for me and several others.

It has become a tradition before Eid to make various kinds of pastries. When I'm at home, My job to help my mom make a cake. We make many types of pastries. One of which is mini-baked sponge cake (Bolu Kering Mini).

Ingredients


  • 300 grams of wheat flour
  • 3 chicken eggs
  • 1 sachet of cocoa powder
  • 200 grams of sugar
  • 1 sachet of vanillin powder
  • Vegetable oil
  • Baking Soda
  • Ceres (toppings)

I didn't have time to take pictures of the ingredients because my mother quickly mixed the ingredients. Plus, she doesn't want to bother making the dough. Lol. But when my mom makes dough, I still watch what she does with the ingredients.


Make the dough

  • Combine flour, cocoa powder, and vanillin in a bowl. Stir well with a spatula until combined.

  • In a separate bowl. Mix sugar, eggs, and baking soda. Then stir until the dough expands and is white.

  • Add the flour that has been mixed earlier into the egg mixture. Add gradually and make sure there are no lumps of flour.

  • Add vegetable oil to thin the dough. You can also use melted butter if you don't want to use oil. Oil is used in the dough to keep it from sticking when baked to make it crunchy in texture.

  • Put the dough in a plastic bag for easy pouring into the cup. Next, we will bake the dough.



Baking


  • Arrange the paper cups on the baking sheet.

  • Fill the prepared cup with the batter. Do not fill too much because the dough will rise when baking.

  • Once all the cups are filled. Put them in the baking dish to bake for 20-30 minutes.

  • Because the topping uses ceres, remove the dough when it is half cooked, and then sprinkle with ceres. You can use other tops such as nuts, sesame, or raisins.

  • Put the dough back in the oven and wait until the dough feels dry and smells good.

  • Remove and leave to cool.

  • Mini-baked sponge cake is ready to be enjoyed.

For options, you can use other flavors such as vanilla or pandan. This cake can last a long time when stored in a tight place. In addition to the sweet and crunchy taste, you can get so many cakes in one process. If you are interested in making it, the ingredients are easy to find.
