Today, I am going to share with you a Filipino Recipe with pork as main ingredient. Why have I come up with this dish? As usual, I was just watching mukbang videos and end up craving after. Sounds familiar?
Have you ever watched mukbang videos? Mukbang, by google definition means,
a video, especially one that is live-streamed, that features a person eating a large quantity of food and addressing the audience
Well, yesterday I have watched a few mukbang videos of people savoring and munching the food they are eating. After watching those videos, I could not resist myself from going to the wet market and look for pork for the dish I have been wanting to prepare. Now, I am going to share with you a recipe that I have tried for the first time.
Most belly rolls that are sold in the market are cooked either by roasting or made crispy using turbo fryer or oven. We do not have one here at home so I have to come up of another way of preparing a crispy belly roll. To give me an idea, I searched in Youtube for possible ways to do it and found out that it is indeed possible by steaming and frying. The process is kinda challenging but I guess it is still worth a try. Unfortunately, I was not able to document every step of the process but I can explain it to you in details.
Let me first show you the ingredients that I used.

Pork Belly Slab | 1 kilo |
Lemon Grass Stalk | 2 pieces |
Scallions | 4 pieces |
Chopped Red Onion | 1 piece |
Salt | 2 tablespoon |
Vinegar | 2 tablespoon |
Chopped/ Minced Garlic | 6 cloves |
Ground Black Pepper | 1 tablespoon |
Oil | 1/2 kilo |
Preparation
Step 1: Rub salt and pepper into the pork and make sure the seasoning gets evenly distributed into the meat and skin of the pork. Set it aside for 15 minutes, enough for the pork to absorb the flavor.
Step 2: After 15 minutes, place the lemongrass stalks, scallions, onion and garlic on the pork slab and brush them with oil.
Step 3: Roll the pork and secure it with kitchen twine.
I had my pork slab sliced into 2, since I wanted half of it to be spicy and half with original flavor. Rolling it was really quite a challenge since it is also my first time doing it. It took me about 10 minutes just to secure both slabs with a kitchen twine.
Step 4: To tenderized the pork, I had it steamed for 40 minutes. If you do not have a steamer, you can use a pot rack. Place it inside the large cooking pot, fill the pot with water just enough to touch the pork and bring it to a boil with medium high heat. Refill the pot with water if necessary. To keep the spices and flavor intact, wrap the pork with tin foil.
Step 5: After 40 minutes, remove the foil, brush the skin of the pork with vinegar and rub it with salt. Set the pork aside and air dry it for 10-15 minutes.
Step 6: Ready to fry the pork. Preheat the pan and pour 1/2 kilo of oil. Wait for the oil to turn really hot before placing the pork into it. Wait for the skin to turn golden brown.
Step 7: Remove the pork from the pan and let it cool for 10 minutes and get ready for 2nd frying. This is to make sure the skin of the pork becomes really crispy. Fry it for another 5-10 minutes.
Voilaa!! Our Crispy Pork Belly Roll is ready.
It's up to you on what kind of sauce would you prefer to have. I prefer venigar and soy sauce with lots of sliced unripe tomato, onion and red chili plus squeezed lemon.
This recipe is best on special occasions. Are you ready to try it for Christmas or this coming New Year? I am thinking of doing so too. This way, I no longer need to order plus I get to choose the pork used to prepare this dish.

Yes, they'll surely love it. The prep and cooking time might take longer specially if your pork slab is bigger but will surely be worth it.
