Usually he only likes some of the food that our mother usually cooks, so that cures his longing for our mother.
My brother is the youngest child, so our mother spoils her very much, as long as our mother is alive, mother always cooks my sister's favorite food, there are even some foods that I don't like but my brother likes, and my wishes are always ignored. After all, he was the youngest and only boy.
So, my brother really likes all processed foods from chicken meat. Starting from fried chicken, chicken rendang, chicken kalasan and chicken rica-rica. For my brother, processed food from chicken is the most delicious food in the world. My brother said at this time she really wanted chicken rica-rica using pandan leaves. He said that usually mom likes to cook chicken rica-rica when I'm not at home, you know, I've been studying abroad for 4 years and rarely eat mom's cooking.
Luckily, before my mother died, she taught me how to cook chicken rica-rica. This rica-rica chicken is simple to cook but has a special trick. Ingredients for Chicken Pandan Rica Rica:
- 500 gr chicken cut into small pieces
- 6 cloves of red onion
- 6 cloves of garlic
- A pinch of ginger
- 5 pcs candlenut
- Turmeric
- 100 gr red chili
- 7 pcs cayenne pepper
- Pandan leaves
- Kecombrang
- Lemongrass
- Lime leaves
- Tamarind acid
- Coriander powder
- Water
- Oil for pan seared
How to cook chicken pandan rica-rica:
- Wash the chicken and marinate with a little salt and coriander powder. Then heat a non-stick wok pan with a little oil. Add the chicken one by one to the pan seared. When it is slightly golden, remove and drain the chicken.
- Puree garlic, candlenut, turmeric and ginger with a little oil. Puree red chili and cayenne pepper. Cut the pandan leaves and kecombrang.
- Saute the garlic seasoning that has been mashed, then add the lime leaves and lemongrass. Then add the crushed red chilies, stir-fry for 5 minutes.
- Enter pandan leaves, thamarind and kecombrang, cook until the leaves are slightly wilted.
- Enter the chicken that has been in the pan seared, mix until evenly distributed. Then add a little water.
- Add seasoning (salt and sugar), then cook for 10 minutes until the spices are absorbed.
- Pandan rica-rica chicken is ready to be served!
The aroma is a combination of pandan and kecombrang that will make your appetite increase. My sister is also very happy with the dishes I made.
