Jollof rice is staple dish in every Nigerian home, it is one of the most popular dishes here. It is enjoyed at parties and events. For me personally jollof rice reminds me of when the family is all together.
I was craving some Jollof rice so here’s is my own spin on it with the ingredients I found in my kitchen.
A bit untraditional but you would love it
15 Medium Tomatoes Diced
4 Small Onions Diced
5 cups of washed Rice
I packet of Sachet Tomato
1/2 TBSP Curry
1/2 cup of powdered crayfish
1/8 tsp of salt
I tbsp of blended Pepper
1/2 cup of Cooking Oil
5 Seasoning Cubes
Water As Needed
1.First of I fry the onions and the diced tomatoes in hot oil and to release its flavor.
2.After they are fried add the Tomato paste
NOTE; The tomatoes can be blended but I wanted everything fresh
By the time you are done it should look like this
3.Add every other ingredients except the chicken stock and stir until it’s combined.
4.Then add the chicken stock and and a little water to make the sauce a bit loose.
This is the consistency you want
Give it a little stir and bring it to a boil. Taste the sauce and check if you would love to add a little bit more salt
- Pour in your washed rice gently air and cover the lid tightly, cook on Medium heat for about 15-30minutes
Tip; it is advisable to use foil paper before putting on the lid, it’s the steam that cooks the rice.
6.Check the rice after 15 minutes, Allow the rice to cook and burn a little to retain a smokey flavor
- Once the rice is cooked, Serve and Enjoy
Jollof Rice can be eaten with vegetables and any other side dishes you love.
I decided to eat mine with some Dodo (Fried Plantains) and some fried chicken.
