I remember in the early days of this pandemic, can you believe it’s been a couple of years (insert sad face), I remember people regrowing scraps of romaine lettuce and carrots. Romaine lettuce grown in water will only produce scraggly litter leaves and if you’re lucky seeds and carrot tops will only produce the greens which are great stirfried but you’ll never get a full carrot. However bok choy is one of the few plants that will regrow itself completely! And it’s easy to do!
Leave the stump intact of your bok choy you are using in your dish. Place the stump in cool water by a sunny windowsill.
In about a week you’ll see leaves beginning to grow and new roots develop!
Once this happens you can go ahead and plant your bok choy in well drained soil in a location of your garden that receives filtered or indirect sunlight.
Give it a few more weeks and you’ll be ready to harvest and repeat the process for never ending bok choy!
