My Delish Breakfast Go-To~ Veggie Scramble

When life gives you eggs.... (life aka an organic farm because I no longer have hens)
you make veggie scramble for bfast!
It's my fave and easy go to dish when I want something filling and healthy(er). All I do is dice onions and fry them in a little bit of olive oil then add whatever veggies I have to the potatoes and sauté them in some unsalted butter.
Today I had tomatoes, zucchini and onions. Something not too crazy. I seasoned this with a little black pepper, garlic and onion powder and red pepper flakes.
In another bowl I mixed some parmigiano and Romano cheese into my eggs and some more black pepper and garlic salt. And a tiny splash of heavy cream. I always am careful with the salt as the parmigiano is a bit salty as is.
I proceeded to pour this mix in to the veggies along with some spinach on top and covered it for a bit then give it a good scramble.

It's so yummy when its all cooked and ready!

I have practiced a form of fasting for years. I can't eat anything until late morning so get a minimum of 16 hrs fasted each day. My body just won't let me eat. BUT I will damn well throw down on a nice and simple scramble like this for lunch, or first meal. The large cuts of fresh veggies, fresh eggs, and a milk for fluff, with maybe some good bacon chunks go a long way to power me through days. Sad to say most days I just grab anything I can as I plow through the day refusing to take the time to make real food.

Totally understand, life gets in the way at times specially when you have lots to do around the house! My days are about to get like this. We'll be hiring a junk hauler to clear the rest of the property so I can start my little herb and vegetable patch!

It’s actually bigger than my old house both house and property. We put in a 2 bedroom ADU to use as my she shed and there’s plenty of room for a greenhouse!

I’m in the city but not downtown anymore downtown I had no yard just balcony overlooking petco park. Very chic but not me lol This house is in the city, but it’s more like where the communities are.

My uncle lived in Poway for any years and I visited a number of times as a kid but I presume all the "communities" are just cities anymore.
