Coz there's no such thing as too much cream cheese.
Recently, I have been obsessing around cream cheese. Cream cheese is the main ingredient to my favorite cheesecake and since I find it pricey, I found a way to make my own. I shared about this method when I wrote about the burnt Basque cheesecake I made a few weeks ago.
Before that, I also shared about the strawberry and cream filo tarts in which the main ingredient is also the cream cheese and I have yet to share the New York Style cheesecake that I also made last month.
If you have not seen my blog mentioning this method, I make my cream cheese using yogurt. Every time I go to the grocery, I make sure I buy a 1 Liter tub of yogurt with which I make plenty of cream cheese. I am one happy girl! LOL.
Last month alone, I made 2 burnt basque cheesecakes, 1 New York Style cheesecake, cream cheese-filled croissants, and also the cream cheese filo tarts twice.
I cannot complain. If it weren't obvious yet, I am obsessed and I really love cheesecakes and the creamy, tangy taste of the yogurt cream cheese! But my daughter seemed to have enough of cheesecakes for the month. When I said I am planning to make another cheesecake, she said, "Again?!" LOL. But honestly, I understand.
But, as I said, there's no such thing as too much cream cheese.
Cue, Cream Cheese Tiramisu.
Tiramisu is an Italian coffee-flavored dessert made of layered ladyfingers, whipped cream, and mascarpone cheese. For my version, instead of mascarpone cheese, I again used my very own yogurt cream cheese. It is pretty easy to make and no baking is required. My children also helped me out in making this easy dessert.
Ingredients:
- Italian ladyfingers (savoiardi)
- cream cheese
- instant coffee
- sugar
- thick cream
- unsweetened cocoa powder
As you can see in the above photo, I used steviana sweetener instead of granulated sugar. Of course, this is as per my own preference, and you can use any sweetener of choice.
Method:
- Dissolve the instant coffee in hot water and set aside.
- Whip together cream cheese, sugar, and the thick cream until stiff.
- Dip the ladyfinger to the coffee. Do this briefly as you do not want to over soak your biscuit.
4- Assemble the soaked ladyfingers on a container or baking dish.
5- Add a layer of cream on top of the ladyfingers.
6- Repeat until you have 2 or 3 layers, according to your preference.
7- Sprinkle the cocoa powder on top.
8- Chill for at least 2 hours and serve.
My family totally enjoyed this dessert. It is not too sweet and the coffee taste blended just right with the cream and ladyfingers.
Please don't judge - I made this dessert for two days in a row. 😝😜
Tiramisu is one of my favourite desserts. I could eat all of it in one day.
