There are a few things that make this Varanasi classic so unique. First and foremost, there is the texture. Although the consistency appears to be quite firm on the outside, it has nothing to do with whipped cream or anything else of the sort.
The extremely light and airy foam is far more delicate, melting on your tongue. As it does so, a smooth yet flavorful milky taste emerges, similar to that of Eggnog, a Christmas staple in North America. Aromatic notes of saffron and cardamom combine with slivers of almonds and pistachios to create an extraordinary symphony.

The yellow froth is only visible during the colder months, specifically from mid-November to the beginning of March. The reason for this is due to its unusual manufacturing process, which is dependent on the presence of morning dew. However, even at this time of year, the delectable treat is only available at stands until around 11 a.m. First, because the foam retains its distinct texture only in the morning hours, and second, because stores are already out of stock by that time. As a result, if you ever plan to visit Varanasi, try to go when Malaiyo is "in season."
