I made this Tasty & Brownie Omelette, as we know Omelette can be made into many different styles depends on your idea and sometimes it comes from family traditions of how they usually add into the Omelette.
Today, I am going to show you with a new style of cooking Omelette following my country cooking style. It can be seen as a classic omelette, egg with climbing wattle, but the taste turned out super delicious. Generally, climbing wattle is easy to find in my local area as it counts as the important vegetables in authentic Khmer food, so that why people grow it a lot.
The eggs with climbing water, I think it is a good combination, people in my country eat this recipe with white rice, do you think there is another way to enjoy omelette more delicious? I also think about bread too, but as long as this recipe don’t really turn out fluffy, I won’t say bread isn’t the choice for me. Now, let’s cooking together!
INGREDIENTS
- 12 uncooked eggs
- Climbing wattle 500 grams
- 1/4 cup of white garlic
- Seasoning (sugar, soybeans sauce, garlic powder, soup powder, salt as required)
PREPARATIONS 👩🍳
Step 1
In this steps, we start to prepare the climbing wattle. First, we need to wash it with clean water and wait until it dry. After it dry, take a big pot and we have to remove the feathery leaves of the climbing wattle from the stalks by holding it carefully with your hands.
You have to make sure and be careful every second because climbing wattle is a kind of herb that have a thorns so if you remove it very quickly, it can cause danger to you by its sharp. By the way, after you finish removing the feathery leaves, keep it aside.
Step 2
Crack all the eggs into the pot. These eggs are large organic eggs. Well, some people don’t really like to add the white part, but I prefer both of them. Of course as we used to do, mix it together until it goes well, smooth and perfectly turned into one color. With all the difficulties I have found about cracking an egg is that the crust of the egg would dropped, but am sure you do it well. Carefully crack it slowly. Then you take a fork in the kitchen, after that you mix it again and again or you can even do it in your blenders too I find it much easier because we use a lot of eggs, it gonna take time.
Step 3
Let make a mixture, the seasoning I used as I have mentioned in the ingredients section. Now, am gonna pour about 1 tablespoon of salt, 1/2 tablespoon of garlic powder, 1/3 tablespoon of soup powder and another tablespoon of sugar. Mix it all together about 3 minutes or until it goes well together. Add the fresh garlic and soy sauce, I used about 1/2 tablespoon then mix it again.
Step 4
After that add the climbing wattle that we already have prepared. This time, we don’t really have to mix it fast again, just stir them together with a spoon until the climbing wattle turned softly.
The combination will turned smoothly after that and now you can measure the ingredients whether it doesn’t overuse of salty or sweet. To make sure I have a yummy mixture to suit my taste. Definitely I have to taste it first but I don’t eat it at all just taste.
Step 5
Let’s bring the skillet and set the heat. This time place it over medium heat, I prefer a nonstick skillet, it easy to flip and make our omelette turns out very well. Fry the fresh garlic in the skillet with oils. Stir fry until the garlic turned a little brown, stir the garlic faster. Then, carefully pour the 3 tablespoon of olive oils into the hot skillet, waiting until it hot hard, so pour the enough amount of mixture into the skillet.
While frying, you have to stand near there watching the cooking process as to avoid the burning. When the first side is nearly cook about 70 percent, flip it as fast as you can to another side, continue fry it about 2 minutes and flip from one side to another side until it turns a little brown so you can have a crispy and tasty omelette. The results is nearly coming, this slice was so good. I would recommend you adding more seasoning like pepper if you like, you can make a pepper sauce as well, I use to try it before.
Step 6
Now, all the slices of the omelets is cooked. As you love it, you can have it now with your meal right now immediately after cooking the omelets, but if you want to decorate your plate with a well organized, let’s cut it. I am really glad if you create more creativity to organize this plate. I am now looking for a good sauce to eat with my omelets, if I find it out, I will cut down the use of seasoning like salt and dipping it with sauce instead. Generally, I cut a slice of omelets into 4 pieces first, then I started to cut each quarter into 4 by using a knife or you can use any other effective tools in your kitchen.
those look like some tasty veggie chips 😄 it reminds me of a local watercress chips and even mushrooms as a product we can buy and it comes in flavors you'd usually find with the usual french fries (like sour cream, cheese or bbq) so really curious to try this buuut the climbing wattle ingredient is new to me, might try this with a substitute veggie instead 😃 thank you for sharing your recipe for this!
