Steps
Perboil the rice and filter to reduce starch content
Chop onions into pieces
Rinse the fish
Heat oil for few minutes, add onions and tomatoes and fry (2-3) minutes
Put fish/meat
Put seasonings, maggi, pepper and salt to taste
Add water and steam for few minutes
Put the perboild rice and stir to mix properly
Cover the pot and allow it to cook
Add curry leaves when it is half done to make it remain fresh
Your Jollof rice is ready to be eaten!
