Hello beautiful foodies! Today I prepared a vegetable cutlet for snack. In Indian cuisine cutlets are tender patties made of mashed vegetables or meat, it's crispy on outside and soft when you bite it. It is a popular snack all over India, and there are variations to prepare it according to regions, This snack is an all-time favourite of my family especially my son.
And since, I got stocks of potatoes in our kitchen, why not make a vegetable cutlet then. So let's get started.

In here, I am using purple potatoes, however you can use any potatoes available.
In case, the mixture is watery, the remedy is to put 1 tbspn of bread crumbs into potato mixture.
You may put coriander leaves at the end, if is available.
Ingredients:
Boiled potatoes 3-4 pcs. Medium
carrots 1 pc. (grated)
Green peas a handful
Sweetcorn (optional)
Curry leaves 2 sprigs
Onions 2 medium
Ginger garlic paste 1 & 1/2 tbspn
Turmeric powder 1/4 tspn
Garam masala powder 1/2 tspn.
Pepper powder 1/2 tspn
Salt as necessary
Bread crumbs as necessary
To dip prior to roll in breadcrumbs
All purpose flour 3tbspn
Water
Methods:

Boil potatoes. When it cooled down, mashed potatoes and set aside.

Meanwhile, in a casserole add in 1/2 cup of water then boil grated carrots, green peas adding a very little salt. Then drain water, Afterwards.

Prepare other ingredients, chopped onion, chili & curry leaves, crush ginger garlic paste, & coarse cumin seed.

Heat oil in a pan, add in cumin seed, curry leaves, onion.

Saute till onion becomes brown.

Add in ginger garlic paste, continue to saute.

Add in boiled carrots & green peas. Mix.

Add in turmeric powder & garam masala powder and a pinch of salt. Continue to saute in low fire.

Add in mashed potatoes, continue to saute, mix till achieved the desired texture. It should be dry and not watery.

Add in black pepper powder. Taste test, adjust salt if necessary.

The potatoes are well mix. Switch off flame.

Transfer to plate to cool down.

Form a small ball and flatten same like this.


And since it is a vegan recipe, we will use flour and water to dip the cutlets prior to roll in breadcrumbs. Mix flour and water forming runny consistency. Same like the above photo.

Roll in breadcrumbs. Set aside for 30 min. Inside fridge, it helps to hold and harden if you put cutlets inside the fridge for a while.

Heat oil in a pan. Under low fire, fry each side.


And that's it. A perfect combination with a cup of tea or coffee.

Those are some fine-looking cutlets chef. I would even enjoy these between two pieces of bread like a sandwich. Nice work as always, love the flavors of this one.
