Hello chefs, its being months that i have not shared u guys any traditional kerala recipes. I was busy with my work and was staying in my office cottage. Finally am home and what better way to celebrate your homecoming than helping your mom in kitchen. When i read this weeks challenge, i immediately thought of making the bitter guard thoran because we are growing bitter melons in our back yard.
- The freshly plucked bitter melons are washed properly
2 Then cut it in to small slices
3 put a tea spoon of salt
4 other ingredients for our traditional bitter melon thoran are chillies , ginger , onions , curry leaves and coconut . Ginger, chillies and onions are cut into small pieces.
5 required amount of coconut is taken. I am using an old type of coconut scraper for removing the coconut flesh from its shell
6 pour some coconut oil in the pan and wait for a few mintes for the oil to become hot.
7 add a pinch of fenugreek seeds and mustard seeds in to the oil.
8 Then add the chillies, ginger , onions , curry leaves and coconut in to the pan .
9 Mix these properly for 2 minutes and then close the pan and wait for 10 minutes while the stove is in high flames.
10 After 10 minutes set the stove to low flames and wait for another 5 minutes . And dont forget to mix these at regular intervals .
Hurrayy... our traditional thoran is ready to be served.....

I am used to eating bitter melon in Southeast Asian recipes, and I must say I am not a big fan because the mild flavors allow the bitterness to overwhelm the dish. This preparation is very tempting though, and can tell from the coconut, chilies, curry leaves, mustards seeds, and more, that this dish would be something I would enjoy. It takes some strong flavors to combat the bitterness, and I think you've done a perfect job of that in this recipe.

I have never tried this at all. I see it all the time and I am afraid to try but your recipe is making me very hungry. Next time I go to the Asian grocer I am definitely getting some.
