Hello guys..
Today I want to share recipes snack that are typical of Indonesia.
The food is usually in became a favorite traditional snacks are on sale in the market.
The ingredients are so simple and cook of lumpang which so easily became a favorite of all walks of life to be presented during the afternoon as a friend to a tea.
The lumpang cake derived from the area of Palembang, South Sumatra. In the name of the lumpang cake because of its shape like a ‘Mortar’ or ‘Alung’ which is the traditional instrument of Indonesia used to smooth the drug, rice, and grains. This cake made of rice flour and tapioca flour mixed with coconut milk and coated with grated coconut. There are two kinds of lumpang cakes that of palm sugar and pandan. This time I wear pandan that I'm planting at home.
Ingredients:
- 10 pcs Pandan Leaves
- 200ml Coconut milk
- 200ml Water
- 5 tbsp rice Flour
- 2 tbsp Tapioca Flour
- 100gr Grated coconut
- 2 tbsp Sugar
- Salt
- Oil
Tools:
- Mold the lumpang cake
How to make a:
- Blender pandan leaves with 200ml of water to get the juice of pandan leaves. Strain and set aside.
- Enter the rice flour, tapioca flour, coconut milk, and sugar in a container. Mix with the juice of pandan leaves. Stir until evenly distributed and then strain it and put it in a teapot.
- Preheat the steamer with moderate temperature.
- Steam coconut for 10 minutes and give a little bit of salt. Lift the oil from the steamer and let cool.
- Apply the oil on the mould cake, then pour the batter into the cake mold. Enter into the steamer and cook for 10 minutes.
- Lift the lumpang cake and cooling down. Remove the lumpang cake from the mold and coating the lumpang cake with coconut which is already in the steam.
- Lumpang cake ready to be served.

That looks mouthwatering! I have never used tapioca flour before. I will check if we could find this in our area but the rest of the other ingredients are available. What could be a good alternative to tapioca flour if ever?
You can use maizena in ratio 1:2
1 maizena for 2 tapioca flour

Lovely!! There is truly no substitute for fresh pandan leaves. They are very hard to find here in Suriname, but whenever we see them, we always buy or ask to pick a few. Nice work as always chef, with beautiful presentation and clear engaging photography.
